Hi Jill, The GF Strawberry Cake Mix Cookies sounds interesting to make. Harriet and I will try it both ways. Who cares how it looks. It's the taste test. Our cookie taste experts are my niece , nephews and their children. It's Yay or Nay with them. Let you know. By the way, The GF Sweet Potato Crackers were so good with cream cheese that we had to make another batch. You know things don't always turn out the way you would like. You made it work . Since the flat ones are more cake like, I would freeze them and use them as cake when surprise company comes over. As you said, later them with buttercream and maybe fruit, top with whipped cream and done. 🙂

I don't know how you remember your recipe while you are cooking. I write mine in felt pen, on white paper and tape the pages to the kitchen floor. Because I'm not on camera, nobody notices me reading them and I don't accidentally film recipe books on the counter top. I get fresh strawberries grown here from September through to early June, so I'm hoping its ok to use fresh strawberries, but with no orange juice. I liked the second recipe the most. I like dense cookies because you can dip them in your cup of tea.

Haha!! There are many times that I forget the amounts of ingredients, and step aside off camera to read the recipe lol!! That is always edited out!! And the cookies will be great with fresh strawberries!! They crumbled apart right out of the oven, but once cooled, were perfect!!! And they should hold together dunked in your tea!!!
