My Abuelita use to call that New Mexico style enchiladas, yum.. beef and goat had red sauce, but pork and chicken had the famous New Mexico green hatch chilies. Oh, and left over turkey after thanksgiving gobble-gobble..

I made this enchiladas ❤ However I called them lazy enchiladas everyone loved Them I had avocado and queso fresco but I got the idea from you Patty ❤ I enjoyed your recipes Thanks and keep on cooking ❤❤

There is no better cheese for enchiladas than that cheese. We would bring bricks home to LA and for Chile rellenos, enchiladas and quesadillas it’s the greatest it melts beautifully

¡Que receta tan excelente! Great pork belly instructions you gave, the meat itself looks delicious, even sounds awesome when taking it out of the oven! When putting them into tacos and giving them a little fry on both sides... I nearly fell over! That's how I love corn tortilla tacos, especially with avocado! ¡Ohh Síííí! 🥩🌶️🌮🥑🌮❤️🌮🥑🌮🌶️🥩
