It's one of my favorite soups, I enjoy having leftovers for breakfast. The last time I had the privilege of having some was in a small town restaurant in florida, and it was amazing! I wish I could have it several times a month! Thank you for sharing your recipe. I try and make it someday if I can locate all of the ingredients where we live now.

Your bringing back such great memories. Back in the late 1970's my wife to be her Uncle would come to town on his way back home from working up north. First thing he would do is go buy the tripe. Come back and warn us it going to get smelly in here. But we didn't care for we know in the end there was going to be such good food for the next week. THANKS I have loved watching your show on PBS.

I have to have hominy in my menudo around my area it’s funny they call it pozole and menudo has no hominy. So now I make “menzole” my family loves it!!!😊❤

Need harmony it's a must. I grew up with my mom cooking it overnight, simmering the soup, then adding her red chili sauce and harmony about 1-2 hrs before we eat. That's the way we cook it, so it would be done when we get up in the morning for breakfast, but we do have a secret ingredient, can't tell anyone 😉

I was just thinking the other day that i want to try tripe!! AND i was looking at my chilis and thinking how i need to use them! Wow, I will make this. Pati. You could really enjoy an Instant Pot! Cut that cooking time from 5 hours (& the energy $ and heat that comes with it) to an hour.

Never heard of people adding mint to menudo. We use epazote instead. But I bet it tastes really good as well.

Here in South Texas, menudo is made with adding the hominy. It is so delicious. Yours looks so delicious without the hominy.

I love menudo but I have no idea where I could find tripe. None of the Mexican grocery stores near me carry it as far as I know, but maybe I should ask. Maybe they just don't put it on display.

I'm from South New Mexico. I have never heard of adding mint to menudo. I know in North New Mexico, they serve white pozole as an appetizer, but it has no flavor. I am not sure why they would serve an unflavored food. I'll try menudo with mint vs. Adding dry oregano and onion to the already served bowl.

I do prefer Menudo with Hominy. It's a little strange how people will devour certain parts of animals but shun others. I guess I'm a bit guilty, anything on the face, outside of cheeks and tongue and it's a no.

How can you make Menudo without tripe. Nobody here likes it or any organ meat for that matter. OMG, that tripe looks so gross. I will have to stop watching. Save the tripe for dog and cat food.

Tripe isn't for everyone. Neither is class and/or tact, for that matter. Perhaps you might look up the word 'ethnocentric' in your dictionary. If you have one.
