Hello, if no gluten flour, just add flour. It might be a bit fragile though..

How long do you freeze it for in the machine?

I usually turn the machine about 1h. Then the ice cream mixture is ready but soft. So better put ni the freezer for a few hours if you like more hard texture🙂

Hello, I don't think you can use 600g of flour in the machine. I tried with 500g flour with it (dough cycle), and it was not really good...

Hello, it is better to use lukwarm milk (about 35° and not too high temp). Otherwise yeast will not work properly 🙂

I really don't believe in extruded udon. Without a binder essentially making it not udon, the extrusion process should break apart the whole gluten structure one would've formed in the dough. If it isn't supposed to be mixed in this machine as well, then it's so far from udon I'd just say it's huge pasta. You can see the rough texture on the image. It looks like it's falling apart even before going into water.
