Here we go! 2 Kirimochi (3.4 oz / 100g) 1/2 cup (120ml) water 2 tablespoons white wine 1 tablespoon vinegar 3 tablespoons white miso or 2 tablespoons yellow miso 1/3 teaspoon turmeric 1/4 teaspoon garlic powder ・2 servings steamed vegetable

I appreciate your explanation about the difference between yudane and tangzhong. So far, I tried making your yudane shokupan 87% hydration dough. wow 87% hydration was very sticky dough to work with 😅. after kneading the dough, I split it into three boules and baked them in a 2 lbs loaf pan at 190° C. The yudane shokupan crumb was very soft, moist and delicious 😋 I'm still learning about yudane. Next, I will try your recipe by reducing the dough hydration to about 75%. I'll change the yudane ratio to 1:1 75g flour and 75g flour. Thank you so much ❤

Hi, this bread looks exactly like the one that we were both here in Australia that we all loved and the company chooses down So sad! I tried making it with short grain brown rice and i failed miserably. I understood you use short grain rice, but there are many short grains. White or brown? Sushi rice? Arboreo, carnaroli? Which short grain? Lastly do you cook it with the fan assisted setting? I cooked my first try with just top and bottom elements and it didn't cook inside. Thank you so much for sharing! 🙏🏽 You may save us gluten free lovers.

I'm so sorry to hear that it didn't work out for you. I am using the Japanese short-grain rice "koshihikari" brand. Go for the best-selling brand in your area. I am using an electric oven with no fan setting. Keep the cooking time as indicated to cook through. Cover the top if browning too quickly. Good luck with your next batch!

Try oat milk 💓 It's much MUCH better for health than dairy 💀🤢 And very cheap to make with a blender and 1 or 2 nuts, a little cooked oats, pinch of salt, l like to add a ripe banana and cranberries,and a cinnamon stick and coffee beans and little instant coffee, makes a Great breakfast smoothie 😋🥤🤤 🎉 Good luck, I have it every week day really gets you up and going in the mornings 🚀 Cearful of blood pressure, coffee will increase blood pressure for maybe 5 hours depending of the consumption...

Good morning! I've been making this bread for a few months...its very moist and tasty! My only problem I have is cutting the bread. First two slices are ok and the rest start to stick to the moist part. I waited and hour after baking and I've waited over night about 7 hours with the same results of bread sticking to the knife. Not sure what to try next. Bread is so good it never last a full day! Any advice would be helpful...^_^

@@kitchenprincessbamboo Hello, Thanks for responding! I bake it for 25 minutes, lid-on then 20 minutes lid-off using slow start method. Also, your regular shokupan came out perfect each time and rice bread blender method was easy and quick to make!^_^

For the oven, which setting did you use? The conventional (up and down heating) or did you use the convection heating with air making it uniform in heat? Mine always fails and I think it is becuase I dont knsow which setting to take. I have a built-in oven.

I found a japanese shopping center in Siracha, Thailand when I was there in September and there I found Mochi. You can't get it in Sweden so i bought some and brought home with me. I knew you had som mochi recipes here somewhere so I was confident to find some interesting stuff to cook. My problem now is just choosing what to make. It all looks so nice and tasty! I heard somewhere that you can grill mochi, is that correct?
