Hello! I made this recipe at the weekend and it was delicious. The contrast between the moistness of the cake and the crumble topping, and the sweetness of the cake with the apple really elevates it. I also browned the butter and added toasted walnuts! Thank you for the recipe! :3

Tried dry baking (oil free)? Or hot fry in stainless steel pan with a little water or stock, though this method might not work, depends if the surface caramelizes... 🤔 Or goes super sticky... Maybe freezing before fry so it's firm, browns, and slowly warms to the center... 🤔🤤❤️🔥

Yeah, Japanese uses soy sauce for both sweet and savoury dish. Sweet soy sauce with dango or in this case, mochi is very tasty.

This reminds me a little bit of your pumpkin dango, which I love and make at least a couple times a year! I might try to find a real kabocha today and make this! I also want to cook a kabocha and a pumpkin side-by-side sometime to see how the taste differs.

I don’t think you can double the recipe to make a large loaf. It takes much longer because the batter is denser than wheat dough. Please keep the recipe as is. Thanks for a good question!

i bet the one that used mixer is the chewiest, but can someone tell me which method that has the same chewiness as the mixer method, i dont have mixer and im so lazy to use hand because of the stickiness 😅 and also ive tried the 3rd method but using different recipe, it didnt come out as chewy as i want it to be, i should try ur recipe soon 😚

The mixer definitely helps achieve that perfect chewiness. Just make sure to mix it well to develop that chewiness!

Mine was at first as well. For me personally, it was because I was accidentally incorporating too many air bubbles. From violently whisking the egg yolks into my batter and also over whipping the meringue into stiff peaks, when it should be medium peaks. Once I got the hang of it, cake no longer deflated

Could be kujo negi , but japan grows wonderful spring onions by culture and also has many varieties, so use what's available or go seed searching and grow something different 😊

Dear comment section, this is a Negi, which is similar to - but not the same as - a leek. Negi have a stronger flavor than leeks, but not quite as strong as western green onions/scallions. If you make this with leeks the onion flavor will be very mild, if you like the onion flavor make this with green onions/scallions instead (I think this is also closer in flavor to the Negi version). It looks very much like a leak, but the white part is much longer than any leak. I have seen in a supermarket or farmers market in the states. I wonder if it’s just a different variety of Leak. I wonder if it is even available in the states.

I saw long green onion in the Asian supermarket in the States. You can substitute with leek. No such big different but the long green onion has stronger flavor.
