Hi Eddie, is there any other flour that I can use besides plain flour? I do have cake flour or self rising flour. If yes, do I need to make any adjustment from your list of ingredients. Thank you in advance for your guidance 🙏🏻

Yes you can use self raising flour instead and your cupcakes may rise abit more. So try putting lesser batter in your cup moulds.

Can you slow cook beef with Saoxhing wine also ? I cooked slow cooked beef with Siaoxhing wine yesterday ,it is delicious. I put it after stir fry garlic, ginger and beef ;let it cook for 3 hours.

Hi Eddie, I did half size & half all the ingredients except for steaming time. Why is it every layer doesn't seem to firm up despite 10 mins per layer. Please advise. Thanks

@@lindalim8295 could be your steamer is not hot enough. It's ok to steam longer than 10 mins until almost firm. Don't need to be completely firm.

Without eggs, the pastry will have a different texture after baking. You can try experimenting with a small amount and see whether it's ok for you

Hi Eddie, I like your recipes that came with clear instructions and details. I saw your various glutinous rice recipes that used both pre-soaking and rice cooker methods to cook sticky rice. Do you have fool proof standard short cut method to prepare sticky rice especially for Kueh recipes? 😊

Hi Eddie, I used your dough recipe to make Teochew Png Kueh and they turned out great. I hv tried various recipes and this definitely hits the note with that soft chewy bite texture. Kudos to both your wife and your effort to share well tested recipes. 😊

Boxed coconut cream is thicker than coconut milk. So you need to dilute it with water. By exactly how much, I'm not sure. You just need to estimate by adding water a little at a time.

I'm not sure but possible reasons could be overcooked during frying or the rice wasn't drained enough after soaking.

What is the total time for baking 20+20 or 40+20 please

It should be 40 mins at 170C and then lower to 150 mins for 20 mins. So the total is 1 hr.

It's actually not necessary if you have a bigger pot to boil all together. I just wanted to show to those who only prefer 1 type of sweet potato.

My cookies turn out to be crumbles easily. Which steps did i do wrong?

I wouldn't know since I don't know what steps you actually did. If you followed exactly as per the recipe then the cookies should not crumble easily. Make sure that your butter is really soft before creaming with the sugar. Also chill the dough in the fridge before slicing them. Hope that helps.

About 4 to 5 days. Suggest to keep in the fridge and reheat when going to consume if longer than 3 days. It will last longer.
