Have you considered using corn extract? I've been craving enchiladas.

I'm going to try adding cinnamon and a small amount of glycine for sweetener.

just went Keto - just found this video. she's not wrong. This IS 2 minute recipe that delivers what she promises. I'm eating a piece that I made two days ago and kept in a baggie in the fridge right now. It toasts up just like regular bread. I added cinnamon to mine. I probably messed up (a little) and didn't use room temp melted butter...I just melted it in the microwave and put it into the mix, same with eggs...fridge right into the mix...not room temp. I'd say don't do that. When mine came out after two minutes, there was a very little bit of wetness still on the top. I might have done another 20-30 seconds but it wasn't really necessary. It sliced like she said and everything. My only caveat is 'don't expect a white bread taste'. I know "duh" right? but just saying. it certainly has a eggy taste...again, duh. Great recipe. Thanks!

Made a version of this tonight. Really wanted a pizza, so when I saw the video, I said, "Why not?". Had no Greek yogurt, so I substituted sour cream. Otherwise, followed the recipe. In the video, after she cut it, her version held its shape. Mine did not. It was so floppy, I had to eat my pizza with a fork. Mine looked like an omelet and had the texture of an omelet, but I had added Italian Seasoning and Oregano, so it didn't taste like an omelet. Overall, I had the taste of having a pizza, but the texture and sensation of bread was really missing. So for those wondering if you can use sour cream, yes, you can. It will cook and brown. But it has a less than satisfying result.

Cool video and nice personality. But I just can't justify 300 calories in butter alone for such a small amount of bread. Coconut flour and Almond flour are also relatively high in calories. So that entire 3 slices of bread recipe which also includes 2 whole eggs are running at least 700 calories by itself... That seems way too expensive imho. Add any kind of protein, some dressing, a slice of cheese, and some leafy greens, and that's over 1k calories for 1 meal...
