Hi! Thank you so much! I had taken me 3 years to master it (but I’m still learning and improving all the time.) I would suggest an in person class if you can do it. I offer them however I don’t know where you live. I am going to try and put together a virtual class for July. So stay tuned!

Your videos are super helpful. Curious, how can you sell wholesale when baking from your house? Don't you have to have a licensed kitchen? I know all states are different, I'm trying to find mine out now.

You will need to get a cottage license or some states call it a limited food establishment. It limited what you can making in your home.

Baking the day before, do you feel they get stale just in the paper bags? Right now, im baking day of and it's getting to be a little too much with orders increasing, any help would be great!

No you can definitely bake the day before! I used to feel the same way, but then I realized people aren’t eating it right when they get it anyways sometimes they do but that doesn’t mean they’re always going to so if it’s sits at your house a day or their house a day it doesn’t really make a difference.

@@madarafarms I found a air roaster they are a little pricey but can do 18 pounds of coffee in an hour 👀 I have four little ones so making an income at home is the goal, I know people who made more just selling bags of coffee than the cafe! I have to plumb and add electric to an outbuilding so I'm hoping to just get started with bread. I know of people who used their front porch to do it, I have heard it will be strong coffee smell though 😆

Thank you for sharing!!🥰 Question for your inclusions - I've noticed when doing my jalapeno and cheese, the breads flatten out a bit (weighing it down). How much water would say should once reduce to? Example of mine and what a challenge! 😂 420g bread flour 84 starter 306 water (73-75% hydration) 100g of cheddar cheese 100g jalapenos If I do less inclusions, i feel like people won't get enough, i enjoy giving people a bit more, similar to your pepperoni one! 😂 Thank you so much!!

Hi I am wanting to get your recipe for making a huge batch of sourdough from home much starter do I need to make a flour and water smounts. I want to start a sourdough micro here because there is no one in my town doing it. I have to make sure how much I need to make to start baking! I just love following your channel. I’m happy to help. I started by taking my daily loaf and doubling, tripling so on and so forth. Thats where I’d start. Use the recipe that is tried and true for you and start increasing it. You will need to make adjustments based on how many loaves your doing at once and what kind of flour your using.

I find these videos SO encouraging. I'm a full time working mom of a 2 yr old and 10 month old, and baking sourdough has been sooooo very much on my mind and heart lately. To be able to stop working and be home with my babies AND get to bake all the time is just something I can't stop thinking about. Thank you for sharing!

Two problems for me still. Ine I am working on my consistency, some loaves come out good and some not so good :( Two I am using a gas oven and only being able to bake 2 at a time is just not cost effective.

Haha it was a wonderful time and coffee was a must! I use a damn tea towel to keep moisture in the dough so that it doesn’t dry out and I don’t like using a lid because they’re not breathable so all of those gases that are building up inside the dough once those start to release a little bit. It doesn’t get built up with that lid, holding it on tightly if that makes sense.

You have a window of about 8 to 12 hours for your first proof if you’re talking about cold proofing in the refrigerator you can leave it in there for a little over 24 hours. Personally 24 hours is my max at cold proofing. I’ve done it a little longer and I just don’t like how it turns out.

Good evening, my refrigerator does not have a temperature of 25 for the bread. I make it at room temperature at home in the kitchen, but how many days can the sourdough be left out to make the bread?

@@alexdominguez6117 if you are not cold proofing in a refrigerator I wouldn’t leave it sit too long or it’s going to over ferment.

Hi! I have a similar set up to you kitchen-wise and am working on doing more bulk-baking. How do you time/navigate where your dough that has all been shaped at the same time stays while some are in the oven? Do you keep them in the fridge while they wait their baking turn? Hope my question makes sense! 🙂

I like to put some of the Everything Seasoning (or whatever flavors I'm using) on the inside. I did stripes of McCormick Tomato Basil Seasoning in a few loaves, along with shaved Parmesan Cheese. So good! Thank you for your videos! Sandy, from New Hampshire. ❤

Scoring recommendation food geek on KZbin has a couple videos with multiple ways of scoring. It’s not as artistic designs , but many different ways with bitard and round loaves

Awe thank you so much!!! not sure what you mean, but if your talking about working on an electric stove the challenge is that that is very expensive to run so I run multiple Dutch ovens in the instead of just one at a time which helps cut down the cost of my electric bill

Of course! I charge $8-$12 retail and $5-$7 wholesale. I’m in a lower income area so I can’t charge much more than that. Depending on where you live your price will vary. Figure out what your cost is and make sure to at least triple that. Go to your local markets and bakeries to see how much they charge.

I’ve been searching through all your videos to see what the inside of these loaves look like and I don’t see any video where you actually cut the bread so we can see what it looks like inside especially the ones with the cheese, cheese and pepperoni.
