Well Rosie I made this a little while ago and it came out great. I did change recipe by using canned sweet potatoes but the only thing that maybe happened was it was a little moist, I think because of canned sweet potatoes….they might hold a little more moisture. Anyway it is very tasty especially with the cinnamon honey butter, that is pretty good stuff….I’m going to try it on toast 😝. Thanks Rosie for a great little recipe.

Oh your recipe looks delicious ❤ Any suggestions for a substitute for the Jiffy Cornbread Mix? I have to eat gluten free cause I'm gluten intolerant and another relative was just diagnosed with celiac and the mix contains wheat 😢

Hi, friend. Actually, I do believe that you can find eight ounce packages of gluten, free cornbread, mix. There is a brand called Martha White that is gluten free. I'm sure there are others. Do everything else the same way and I think you're good to go. Good luck.

Did you strain the fat off for the gravy or did you use it all?

Hi friend. In order to make gravy, you need fat. The drippings will have plenty of fat. In the video, I did add two tablespoons of butter mixed with flour as a roux /thickener. The two tablespoons of butter are not necessary but will give more flavor. You can actually just get a quarter cup of flour mixed with, a quarter cup of water, or maybe a little bit more water if it's too thick and then add that slowly to your drippings to make a thickener for your gravy. As your gravy boils, the flour mixture will make your gravy thick. The drippings will already have a lot of flavor from your turkey. Taste it, and if you think it needs salt, add a little bit. Just keep stirring it and let it come up to a boil. You will have a very tasty gravy. Good luck!

Personally, I like mozzarella. That does seem to be the cheese that I see a lot of people use. But honestly, if you have a different type of cheese that you like more than mozzarella, then I would say use your favorite cheese.

All of the markets will have them at this time of year. Smiths, Albertsons etc. Here is another video that I made with a 3 lb. turkey breast complete Thanksgiving meal in a crockpot. Ask someone who works in the meat department for help. Good luck!

Thanks, Rosie! Great recipe! The only suggestion I would make is to cook the breast to 160, pull it from the oven, and allow the residual heat to carry it to 165 degrees. Breast can easily overcook, and if you pull it at 165, the temp COULD rise to 170, or higher. 170 - 180 is OK for dark meat, but not a turkey breast! Have a great Thanksgiving!

@RosieCooks You know I was teasing you. Puff Pastry is a lot of work. My first job out of culinary school was in a place called DuFore pastries. I made Puff pastry. 100's of pounds a day. They had a rolling machine. Kinda like a Pasta maker only bigger. ALL I had to do was fold it 3x's and feed it in. They sold it and used it.
