I like the skills and the teaching but it is super hard to hear since you don’t have a mic near your mouth I mostly hear the utencils against the griddle and I couldn’t finish watching it because I couldn’t understand much. But I would watch you video again if I could hear better for sure.

I heard the same thing about using the area by your thumb to gauge how the steak is cooking except the last part. After medium-well, you make a fist and punch the person who ordered their steak well done.

Cannot imagine the amount of practice it takes to be a Hibachi pro. In addition, you are directly interacting with the customer It must challenging cooking infront of 6 or 8 hungry people and cooking fast enough to not keep them waiting too long.

I get what you are doing but “Hibachi” is not a correct term for your style of cooking. You’re good at it for sure, just wish the term wasn’t used the way it is in North America. Hibachi literally means ‘fire bowl’ (火鉢 - ひばち) and refers to an open-topped pot (usually round or cylindrical in shape) or a box made of (or lined with) fire-proof material into which charcoal and ash is placed for the purpose of heating a room. It is believed to date back to the Heian period (794 to 1185). Just a little education for viewers.
