All coffee heads shouldn't hesitate to roast their own beans. It opens up a whole new world availability, and affordability. I've been roasting for roughly 2 years with the same $130 'Bar Well', crockpot style roaster. The best coffees' I've ever had in my life, I have roasted. Currently drinking a Konga G1 Yirgacheffe. It's fantastic.

I recently got your Kiangoi, very very interesting coffee, I'm wondering if I'm doing it justice though, do you have any suggestion on water temp or grind size (e.g. comandante)?

They are very delicious, and agree on the processing. The Coco Natural in particular is super interesting as the Rodriguez family succeeded in creating a very clean natural.

The extraction is 19g in 41g out. At this time, I wonder what time, temperature, pressure, and basket used. Maybe VST 20g basket?

We use VST 18 g ridgeless baskets (we sweat by the ridgeless). 7 bars of pressure, measure in the group head with a Scace Device 2.0. Temperature is 93.5 C. Time around 28 seconds, but test in the 26-29 sec range. Have fun!

What are your thoughts about using minerals for specialty coffee (Aquacode, Third Wave Water) with distilled water? As a subscriber I usually use Aquacode mixed with distilled water for your coffees and it turns out lovely.

Minerals in distilled water can be very good, but in our opinion the coffee tastes cleaner, more aromatic, less bitter and more acidic with pure RO water (15-30 ppm). You do sacrifice some body/mouthfeel though, but especially with these two coffees, we'd go for boosting the aromas as much as possible. Maybe try adding less than usual. Let us know what you find.

From my knowledge they don’t remineralize, just use the RO water with around 40 ppm. I have emailed them on the issue and that was the answer.

@@tommihommi1 Tap water in Copenhagen is extremely hard with a very high Calcium Bi-Carbonate content (around 500pm). So we actually filter the tap water through a Reverse-Osmosis water filter, and then use the straight Reverse Osmosis water for brewing which ends up around 30 ppm. We do not remineralize it with anything before brewing. We find this gives us the very clean, aromatic and complex cup that we are searching for. It's hard for me to say exactly what the 30ppm is made up of, as the water quality fluctuates greatly in Copenhagen. So my suggestion would be to use water around this 20 - 30 ppm range, which would consist of; No Chlorine Minimal Sodium Calcium 25% Magnesium 75% this was their exact response. sorry that my answer wasn't accurate before

The description of the coffee you guys sell matches perfectly with these beans (taste etc). The Vista Hermosa was the first bag of coffee beans I bought, and it has been love at first taste ever since. Great addition to the written material. One suggestion for the next subscription video probably on many people's minds, the practicality of the new packaging. I had to resort to using scissors to open a Kieni, probably loosing out on some of the great taste. Could you show the proper way to open it, please.

Hej Henrik! And thanks for the feedback. The new bags are easier to recycle, however, we are working on a better solution for opening the bags. Until then you should make sure to open it from the front, and not the back :)

Hej Henrik. Yeah, there's some teething problems with the new bags. You should pull the zipper from the front of the bag off, and then it should be re-sealable. But on some bags, the liner apparently sticks and ruins the zipper. We're working with our supplier on fixing this on upcoming orders.
