Jaime Casallas and his son, Jaime Andres, cultivate coffee in the Colombian coffee region of Huila. Since initiating our partnership a decade ago, their motivation and investment have significantly enhanced the quality of their product.
Initially focusing on traditional varieties like Colombia, Typica, and Caturra, the Casallas family has shifted towards cultivating more demanding varieties such as Geisha, Pink Bourbon, and Caturra. These exquisite varieties are featured in the coffee we are launching today.
Nestled in a valley surrounded by mountain slopes, we find ourselves in a hidden tropical paradise. An open kitchen faces the veranda, with a view over their processing facilities and the mountainous landscape covered with their coffee trees.
The coffee cherries are depulped and washed thoroughly two days after picking. This washing process is repeated four times before the beans are dried on raised beds, shielded from direct sunlight, for 30 days.
The unique combination of high altitude, rich terroir, the varieties, and meticulous processing results in a very good cup of coffee. It boasts sweet citrus notes of mandarin, complemented by the summery top notes of elderflower.
