For this recipe it best to use baking powder to help rise. You can use the yeast but it going be like bread.

It's probably the kind of corn you purchase, some of them are rough because they don't blend them smooth. You can blend the dough before you prepare it and it should be fine. You will get very smooth banku

No okra stew has tomatoes,..it is the tomatoes that cuts the slime. In volta where i come from we don't make okra soup with tomatoes. We make the sauce with everything else except tomatos and that gives it a long lasting slime. But grate video

Not sure , I haven't tried it with oats before. This recipe is made with rice and tiger nut, but you can try it with the oats, maybe you might like it.
