currently working on a truck build as well. the 'ribs' are basically the same as yours. I framed mine out using 2x4- sideways and used the 1.5 in foam insulation. I plan on a roof mounted RV AC/heatpump. with a roof vent next to the hood for make up air to help the ac work better.

Where did you get a commissary for your truck

You could build a refrigerator/freezer trailer to pull behind it.

Great video as always. Thanks for addressing the storage of food in the truck. That's why we have the biggest fridge when could fit on the truck. It has been a life saver at the bigger events. No more lost sales. And we also made a smaller menu for speed of service. One question how is the Square POS working out? We are using a Clover POS but I'm not happy with the service fees.

Hire a licensed fire protection company and have your fire suppression installed properly. These systems have to be inspected by a licensed company every 6 months. If you have a fire and your insurance company figures out you did it yourself they won’t cover the bill

The filters in the hood are total garbage. They’re not meeting any codes and made in some Chinese alleyway. You’re not supposed to be seeing behind the filter or be able to stick your finger pass it

I'm confused as all can be. Why not just put your Box in the front of the trailer so that you dont need to string your main power cable underneath which can be easily damaged durning transport?
