But how do you actually stop all the coals from burning to ash? Like you had a lot that was still good, but ours goes all to ash. How do you stop the burning?

Love my pk360 however on long cooks the ash build up using the indirect setup chokes out the fire. The temps just crash. The ash builds up over the top of the grill grate. I start each cook with a completely clean PK. Any ideas on the ash build up?

I was born in 1956 and my grandparents had a PK grill for as long as I can remember. It was a late 50's, early 60's year model. When my grandmother passed away in 2007 I wound up with the grill. They took very good care of it and so have I. It's all original and in excellent condition. I cook on it all the time and love it! The only flaw it has is the little tips on the slide vents are broken off but you can still slide them with a screwdriver. This thing is 60 plus years old and still a cookin" !!

I have seen steak competitions where they wrap string around the steak to keep the shape during the cook. Also, basting in butter in the last half of the cook. And last, they put the steak on a grate while resting so as not to ruin the grill marks... Your thoughts?

I have this Grill, The AF version. He added a shelf to one side which is practically unusable when the lid is open (note how he has the lid removed in this video). The little front shelf is nice but it would be better if it folded down and was larger. Overall, it's a great grill, but it could be much better with these changes.

That is too small of a cook space which is why I recommend getting a dedicated griddle if possible. Looks good tho!

10 months into my pk360 the paint started chipping off. Customer service was no help and after spending almost 1k you would think it be a better paint job

Aaron, (just got one of these) the shelf on the left side is pretty much useless when the lid is open (only about 3" of usable space), bad design decision! Why didn't you you make the front shelf much larger and collaspable instead of the left side shelf?, this would make it much more functional. It makes me wonder if you actually used the grill with these mods prior to it actually being made. Still a great grill but with your name on it, it could have and should have been much better!

I see that the Grill Grates prevent the meat from burning and give those handsome grill marks, but do the Grill Grates impede or hamper the charcoal grilled flavor of the meat at all? Any downside to using the Grill Grates?

Wow! That’s a TON of lit charcoal for smoking ribs. I use about 1/4 that much of lit charcoal and fill the rest of the side of the grill with unlit charcoal. I normally get at least 4 hours at 275 without adding more charcoal.

I have The Big Green Egg, the Weber, the pellet grills, Gas Grills and just picked up a PK Go. Someone gave my parents a PK grill many many years ago and my dad would cook on it occasionally and it would do good but we always had a big steel casing traditional pit that was fired up most Sundays. We sold it in the estate sale and it probably went for $20 bucks. I saw one recently in a local store and did not realize how expensive they were! Wish I had kept that old one for many reasons. It looked like new because it would never rust! They are great grills!
