I recently made cottage cheese pancakes,they were browned beautifully on the outside, but were still creamy inside. They tasted good, but not fluffy ….. Did I do something wrong, the batter was very thick.

I avoid wheat flour unless fermented in sourdough or sprouted to reduce naturally occurring toxins but in pancakes I use coconut flour which uses significantly less flour.

Good Recipe, but just something that needs to be considered here is that Whey Protein is different from Casein (The major protein in Cottage Cheese). While I've never taken Whey Protein myself, the on paper research suggests Whey to be better than Casein, the big reason being that Casein's Beta A1 that is the primary casein component in milk of most of the western cows, has been associated with diseases like Autism, Alzheimer's, etc. So, some more research is needed on this before it gets advised. P. S. - I consume predominantly Casein myself, as it is more natural than whey (Which is chemically extracted), but have no choice.
