Superb video. Lots of good information. In Italy, the American soldiers’ meal of powdered eggs and bacon was not carbonara. And it was not called carbonara. Carbonara came about at the trattoria Da Cesaretto alla Cisterna in Trastevere in Rome. The first published reference in Italy to carbonara was in July 1950 in a newspaper in Turin. Italian chefs never, ever used bacon. No one should use bacon. Guanciale first, but if need be, pancetta is okay to use. And your comment about parmigiano-reggiano is perfect. American, British, or Australian “parmesan” is not true parmigiano-reggiano, especially the terrible “parmesan” from Wisconsin.

Just watched the q &a and loved it. Related to seasoning, I grow most of my own food (impossible in Manhattan I guess!) so I can choose varieties for flavour instead of shelf life. My food doesn't taste as it would in Italy, but it's ok. The best advice I've had is to use the best ingredients you can afford and mess with them as little as possible. Taste the food not the seasoning (unless it's Indian, which is a whole different thing!) love the videos, keep them coming 😊
