Best chow mein and fried rice are Guyanese. The flavor is unique. When we went to Guyana for vacation in the 1960s/1970s, my relatives would do Chinese takeout from across the street and around the corner. Chinese takeout was a novel idea for us because we never did takeout in Trinidad. My mother cooked Chinese food every week.😆😆 We used to take the fresh wiri wiri pepper back to Trinidad. I wonder if USA or Trinidad Customs let it pass these days. I imagine they confiscate all fresh goods these days. USA even confiscates dehydrated goods from China. Just an Idea: Next Christmas Day, you should tape your food feast, from prep to cooking.
