I was in Japan and found a Tonkatsu sandwich I was so excited about. The clerk looked at it, said it was bad and threw it in the trash! Internally, I was about to cry because it was the last one. He got me a fresh one! It was amazing. I wish there was a Japanese 711 near me!!! They are so amazing!

Hello from Japan! These look amazing, thank you for this video! Not a combini (convenience store) food but I’ve had a croissant version of the strawberry one, and it was heaven. Croissant sliced in sandwich half, LOTS of whipped cream and strawberries.

I made egg salad by mixing just the yolks with the mayo, etc and adding chopped whites at the end for the first time recently and wow. I never thought it would make a difference, but it's a game changer.

@@Spungizzle You could just mash the yolks normally. It might not be as fine/smooth as a strainer but will still work. The point is just to retain contrasting textures by mashing the yolks separately from the chopped whites.

protip on the dough kneading: after you’ve mixed the dough just let it rest for like 20 minutes and it’ll be way way easier to knead, I’ve done this a ton of times and it still amazes me how much of a difference it makes

These sandwiches are all amazing. Back in 2005 I lived in Japan for 2.5 years while on active duty in the Air Force. These were my go to whenever I had spare time and I was hungry. Seriously, you one of very few chefs on KZbin that actually articulates the process of creating bread from scratch applying the best method possible! The warm milk and yeast, allows the yeast to bloom and feed of the sugars of the milk and adding the salt later, let's the yeast continue this process cos salt can actually slow down the process.

You can sauté the julienned cabbage lightly in butter seasoned with black pepper and salt to reduce setting time. The cooked cabbage releases the sulfur and adds to the pork profile.

For those of you in the US where it may be harder to get a shokupan loaf tin, try searching for a pullman bread pan instead. It may not be the exact same size, but they're made specifically for square white breads with very little crust.

Tip: instead of a sieve for the egg yolks, use a potato ricer. Also works great for deviled eggs.

Wow, thank you Andy for making these, another appteciatin from a Japanese. Those look authentic and truly amazing! One tip: we make the tamago sando at home, but I've never heard of the technique of separating the white and the york. We just dice the whole boiled eggs and then mix it. That's much easier for home cooks.

The strawberry sandwich reminds me of a dessert that we have in Sweden called a Semla. It is so popular that it has it's own day. It made with a sweet bread that sort of looks like a brioche hamburger bun with whipped cream and a cardamom paste in the middle. If you wanna have a go at that you'd get some serious cred from swedes.

regarding making the Katsu, I make a lot of schnitzels and the method I found to make it more tastier is working with your hands set one hand to be "dry" and the other "wet" so the dry one will put it in the flower put it on one side tap it gently and flip and tap gently again it will cover everything better, the wet hand will handle the egg wash just put it in raise it remove it and let the excess egg fall back to the container and transfer it with the wet hand to the bread crumbs, with the dry hand pretty much just punch it with you back of your fingers which will make the meat spread out a bit and will force the bread crumbs or panko coat way better. enjoy

If I may, a tips I've learned for katsu that was kinda counter-intuitive. (Obvious tip: go to a Japanese grocery store for panko if you can, it's both cheaper and better.) If you wet your panko with a spray bottle until it's the consistency of sawdust, it will stick so much better, and you get a really intense crunch out of it. Highly recommend - love Andy's videos, bacon-water trick blew my mind!

I make this bread daily for my family. You don't need non-stick pan for the tangzhon. You also don't need to cover it, doesn't matter if it develops skin or not. It will be added to the dough and worked in anyways.
