No, the amount of lemon you use should be just enough to make the soymilk curdle. Of course too much will make the tofu sour at the end. So it's best to add them in batches so you don't add too much. For the water, it'll totally depend on how thick or light you expect the resultant milk to be. In this video I added about 3 litres of water so there was more whey at the end.

No. Boiling makes soybeans wholesome and the beans can be stored for a few days to a week in the refrigerator and frozen up to a month

Yes, soybeans can be boiled without soaking. In this case, it's going to absorb water while boiling and swell up. The boiling time however can be between 45 mins to an hour. Overboiling can destroy necessary nutrients in the beans.

Thanks for sharing these! Made date syrup the other day and was looking for something to make with all the pulp. These date cinnamon buns turn out so delicious. I wasn't sure what temperature to put them in for but we put them in for 25 min at 175C (350F) like the cookies and they turned out great. I still have even more date pulp so I will try making the filling and freezing it to make these rolls if i'm ever feeling a craving for something sweet.

It's easier once the beans are boiled. You can also use a blender. Pulse the beans with water for a few seconds and the skin will come off easily.
