tip: to avoid crispy edges- use the wet paper towels or better yet, the wilton wraps that you can soak in water. Also cook for longer at lower temp. Works for me, and I never get crispy brown edges. Wish I could cut as evenly as you do!

Thank you for the thorough tutorial! I am actually attempting to make modeling chocolate (for the first time), or I guess candy clay? I'm using the white melting wafers. I've tried a few batches, I thought I had it, but keep getting modeling chocolate that's smooth, but has not very much stretch/elasticity (I was expecting less than fondant but more than I have), and it's almost crumbly when I poke it. I can smooth it, but it doesn't look smooth like yours. All 3 batches have sat on the counter (one was made 48 hours ago), and they're still not rock hard like you've demonstrated. Too much corn syrup? I don't know if you still monitor comments here. Even if you don't, I did appreciate the tutorial. 😊
