What would be the best way to make a oil that has asian ingredients like coriander, garlic & ginger, would you bother blanching the garlic & ginger or blend them in at a specific oil temp. I would love to try something like that also since you mentioned the garlic and was also wondering how long it would last and how one could maybe preserve it or extend shelf life.. thankyou for the great video

Hi Lucas, you can absolutely use a smoke gun for this 🙂. Watch out for your smoke detector though, you can put it in a closed container under the kitchen fan for example 😉

Hi Carrie. No I do not have any specific measurements. The magic of this recipe is in the amalgamation of tastes from the different ingredients, especially the lime zest, herbs and spices. The vegetables provide a fruity crunch. Don't worry, you can almost not go wrong by following the basic outline. Balance is the key 🙂😉

I made this recently but it turned out too sweet so I added a little salt, pepper and cream and that worked but thinking about afterwards I should have added some lemon. What would you do in my situation Chef?

Hi 🙂 Thanks for the comment and the question. In your situation, I would start by making sure that the orange juice you choose does not have much added sugar. Secondly, make sure you use salted butter. Lastly, your suggestion to use salt and (white) pepper, plus a touch of lemon juice is right on the money; very good instincts there 🙂👌

Depending on the kind of orange and how sweet it is, it pairs very nicely with a bunch of pineapple sage. I love this sauce with any type of seafood or poultry, even PORK!!!
