I just came across your channel as I was preparing to cook some cat fish.. your tutorial took me in a different direction..I love cooking so I had all the ingredients on hand and I decided to cook my catfish your way.. plus I had my bottle of Chardonay chillin as I started the process. I used Paul Prudhomme's spice mix, but cooked it just like you said - lemon first, fry pan 4 then 3 minutes, then in the oven for 2. Cooked perfectly and fast. Thanks for the your excellent directions. My new go-to recipe.
