I have been using your suggestions for months now and my catfish is fantastic! I season my oil (something I started doing for a couple of other recipes). I marinate my fish for about 20 minutes and I let it rest after I bread it. All of these steps took my previously good catfish to great! Thank you!!! (I lived in MD for decades so I have used Old Bay for years!)

2:24 - i learned a tip to roll any meat, be it fish or chicken, etc, in mayo first, not eggs, so the batter really sticks well. some times the egg doesnt stick and there goes my breading, but wow, this looks sooooo good. also, i leave my breaded fish in the fridge for a few hours but i love that you also let it sit and you dont put it directly to paper towel, and you put it no a rack. another tip i learned over time.

I might try to try the milk marinade. I think it will make it come out great. I've dipped it in milk but I haven't really left it in there long. I'll try the garlic also. The most I've ever tried when it comes to adding something to my grease is maybe a little beef tallow. I have done the hot sauce and lemon juice before. It gives the fish an awesome taste. Seasoning the fish is a game-changer also. I think these restaurants are stealing home ideas. I've noticed a lot of them starting to sprinkle a little seasoning on the fish when they pull it out. Peanut Oil is a great oil

I just came across your channel as I was preparing to cook some cat fish.. your tutorial took me in a different direction..I love cooking so I had all the ingredients on hand and I decided to cook my catfish your way.. plus I had my bottle of Chardonay chillin as I started the process. Babeee!! Let me tell you I followed your instructions to a tee and my catfish came out the BEST Ive ever made it, while drinking my glass of white wine..2 glasses filled to the rim to be exact!! just found your video, loving it so far.. and i hear ya about peanut oil, thats what i have been using, but i also learned that avocado (refined, not cold pressed) has even a higher smoke point than peanut oil and its way better for you so, i got that at walmart and just tried it out. its sooo good and keeps the fryer smells way more mild for some reason. anyway, back to the video. :-)

Beautiful! I cook a lot of fish I do both breaded like this recipe and battered which people don't realize are two different things. When I do breaded fish I usually use the fish called striper which I catch down at Lake Texoma. And yes Old Bay is a wonderful seasoning for either a breaded or a battered fish. If you're feeling adventurous add a little simple French's yellow mustard to your liquid mix if you do that I would leave the lemon out though. In Louisiana is the best hot sauce for this I keep it in my fridge all the time. You did teach me some nice techniques

I like to get those little cat fish. My brother in law built a pond and stocked it with catfish. I take a couple of scoops of corn and throw it in the pond. then, when the cats come to eat I throw my net over them. I throw the bigguns back and keep those little ones. Cut off the heads, gut em, and into the fryer they go. I made a fish batter similar to yours. Man, them cats are good.
