Hi Chef, I’ve got garden vineyard leave but every time I use them to cook they have that strong gamey taste, is there a way to remove that taste ?

Heyhey Fahed 😊 Wash them first, rubbing each leaf. To remove the strong gamey taste from garden vineyard leaves, blanch them before cooking. Submerge the leaves in boiling water for about 1-2 minutes with a splash of lemon juice and a pinch of salt, then immediately transfer them to an ice bath.

Hey, I just got into Abu Dhabi, barely a day, I worked in Dubai for 5 years under Chef Massimo Bottura but the Dubai municipality was not that strict with the standards, how strict is it here ??

From my experience in the UAE, they always uphold strict food and safety standards to ensure guest safety. Abu Dhabi is no different, so you'll find the standards here are quite high too.
