Very nice as usual, Sayaka! I love trains, especially in Japan, in time, and ekiben. One of the best things travelling with the shinkansen is to choose, buy and eat ekiben. But beware, it takes time to choose, the choice is huge! We took the shinkansen several times Fukuoka - Tokyo and back and also southbound in Kyushu and elsewhere. Once somewhere I found an ekiben that heated itself when opening it, magic! Gobo, ebi-imo, yamaimo are wonderful root veggies. Also ganmo is very good, it reminds of German knödel, perfect to soak up sauces. Of the four ekiben my choice would be the Kyoto variant with karaage and grilled mackerel. Have made karaage a few times lately, but I always include Kashmiri chili powder to make them spicy, I also make them small. Also made both Japanese and Korean ottogi curries lately and tonkatsu with plain S&B curry roux sauce. No demi-glace sauce in shops here in Romania, have to buy 5 kg of bones and cook myself. It does smell a lot though, a bit worried about the neighbours in the apartment house... Also have tried to perfect soft Japanese hambagu, I use half beef/pork mince, crushed panko, an egg and cream. Sometimes with a Swedish twist: chopped pickled red beet and capers in the mix, (beef Lindström). Arigato and have good days!

I really like making egg sandwiches but these are next level! thanks for the great tips! here are my own tips 😊 1. scrambled eggs turn out better if you stir them continuously 2. it's really important not to overcook eggs - as soon as mine reach the desired consistency, i remove them from the heat and put them on their own plate while i prepare the rest of the meal. they will always cook a little bit more from the residual heat, as you said

Very nice as usual, Sayaka! But as an old conservative man regarding cooking I must say that pork loin is best with a rich cream sauce, or use pork belly and that chicken thighs are the best parts of chicken. Yes, more fat, but also more taste. It all depends on one´s dietary advices or ideas and taste. Over the years now I have learned your cooking methods and some of it I already knew from living in Japan for many years. The other day I made pork cutlet katsu and S&B roux curry sauce with rice, not very advanced, but very tasty. And also kimchi from both Chinese cabbage and daikon, it will take a week or so to start fermenting. Also starting a new nukazuke bed, my old one died when I had to travel because someone in the family died. A nukazuke is like a very quiet pet, alive, but easy to handle with a little care and it gives you crispy, pickled veggies for years. Have you done any? Here I use wheat bran, it works just as good as rice bran. I look forward to an episode with yam - yamaimo - mountain potato, I just love it in gratins with waving katsuobushi on top etc. Ok, have good days. All the best and arigato from Romania and me.

I haven't had my own nukazuke bed, but I buy nukazuke vegetables that have already pickled. It's very nutritious fermented food so I like to eat it! My husband really love the taste of nukazuke. That is amazing you have your own nukazuke bed. It must be difficult to keep them nice. Maybe I can't handle it well 😅

@@JapaneseCookingChannel it is easy and does not smell. But if one goes away for a longer period the bed might die. There is plenty of info on the Internet how to start and maintain a nukazuke, try it!

I use sake for drinking. Cooking sake contains other seasonings such as salt and sugar. So, I think sake for drinking is better to use. But it doesn't have to be expensive one. I always use the cheapest one!
