Snow's was one of the coolest experience I had with Texas BBQ. With a massive line of camps at 5 AM, games they set up during the wait, and watching the pit masters smoke throughout before they open at 8 AM - and topping it off with generous free open bars for cocktail and beer, it was one of a kind. Would love to visit once more.

Is the no stuffing in the turkey’s cavity a must in how this has to be done? Or can one also get some stuffing out of this cooking style?

You shouldn't bake the stuffing in the turkey anyway. Either you bake until the stuffing is done and the bird is dry and over-done, or the bird is just right and the stuffing hasn't reached safe food temperatures (after absorbing raw turkey juice for hours). You can make stuffing that tastes just as good using the turkey drippings/gravy when baked in a sheet pan.
