✨Saffron Baked Yoghurt✨ This baked yoghurt is prepared in the instant pot just makes it so easy and quick, delicious dessert, that tastes heavenly! Ingredients 250g hung curd 220ml condensed milk 150g fresh cream 4 tbsp saffron milk 1/2 tsp cardamom powder Method In a small bowl, mix milk and saffron, stir and set it aside. In another bowl, whisk together hung curd, condensed milk, cream, saffron milk, and elaichi powder. Transfer the mixture to a heat-proof bowl. Cover with foil paper Steam it on medium flame for 20-15 mins till it sets completely. Let it cool down at room temp for 1 hour and refrigerate in the fridge for 4 hours or overnight. ✨Rasam Rice✨ This one-pot rasam rice prepared in the instant pot represents the epitome of convenience and simplicity in cooking. Ingredients 1/2 cup toor or arhar dal 1/2 cup rice 1 tbsp ghee 1/2 tbsp oil 8-9 garlic pod 1/2 tsp mustard seeds Hing pinch 1-4 tsp cumin seeds 1 green chilli 2 dry red chilli 8-10 curry leaves 1/2 tsp pepper powder 3 chopped tomatoes 1/2 cup whole shallots 1/2 tsp turmeric powder 1/2 tsp coriander powder 1 tsp red chilli powder 2 tbsp rasam powder Salt to taste 4 tbsp tamarind water 4 cups water Method Soak rice and both dal in water for a minimum of 30 minutes and drain. In a pressure cooker Heat oil, tadka of mustard, cumin, hing, pepper, curry leaves, garlic, chilli, red chilli fry. Cook onion, and tomatoes for a minute or two. Add all spices. Rice, dal and cook for a minute. Add water & ghee and pressure cooker. Add tamarind water and check for salt. Serve hot and enjoy! ✨Anjeer Millet Kheer ✨ A delicious fig and millet pudding cooked in milk sweetened with figs and flavoured with cardamom. Makes it a super healthy and comforting dessert! Ingredients 1/3 cup barnyard millet/samak rice 10-12 soaked anjeer/dried figs 1 tsp ghee 1 litre milk 2-3 sugar(if required) Some chopped almonds/cashews 1/2 tsp cardamom powder Garnish with some chopped pistachios Method Soak millets for 40-50 mins in normal water and also soak dried figs in hot water for an hour. In a blender jar add soaked figs to make a smooth paste. Heat the pan and ghee and milk and bring it to a boil. Reduce the heat to low. Add the soaked millets and cook until the milk is reduced to half. Add cardamom powder, chopped dry fruits and add the figs paste and cook for 6 to 8 mins stirring constantly until the mixed well and starts to thicken. (Here you can add sugar if you want and cook until dissolved) and switch off the heat. Serve warm or chilled garnished with chopped pistachios and some soaked figs and enjoy!

✨Kahwa Cake✨ This cake in one word would be cosy! The warmth of spices combined with saffron and nuts takes this cake to the next level. Ingredients 180g whole wheat flour 200g jaggery powder 25g milk powder 250ml kahwa tea 120ml oil 1 tsp baking powder 1/2 tsp baking soda Some chopped almonds and walnuts Method In a saucepan, add water kahwa instant mix and Kesari milk masala. Let it come to a roaring boil transfer it to a bowl. Preheat the oven to 180 degrees Celsius and line a 6-inch pan with parchment paper. When the kahwa is Lukewarm, add jaggery powder and oil. Whisk it till you get a homogeneous mixture. Add in wholewheat flour, milk powder, baking powder and baking soda. Whisk everything nicely. Pour in the prepared tin and garnish it with chopped nuts. Bake in the preheated oven at 180 degrees for 35-40 mins until a skewer comes out clean. Let it cool and serve and enjoy! ✨Choco Lava Cake✨ A chocolate cake that's warm, gooey, and indulgent that makes it a rich and decadent dessert and perfect for this rainy season! Ingredients 🍫100g chopped dark chocolate 🍫3/4 cup hot milk 🍫2 tbsp melted butter 🍫1/2 cup powdered sugar 🍫1/2 cup refined flour 🍫2 tbsp cocoa powder 🍫1/2 tsp baking powder Method In a bowl add chopped dark chocolate, hot milk and melted butter and whisk until the chocolate melts. Add refined flour, powdered sugar, cocoa powder, baking powder and mix until combined. Grease cups with some butter and dust cocoa powder. Pour the batter until 3/4th. Place them in a preheated oven at 180*C for 10-12 mins. Invert and dust some powdered sugar. Serve immediately and enjoy!

✨Chana Dal Vada✨ A crispy and savoury fritter made with split chickpeas (chana dal), onions, garlic, ginger, and spices. It's a perfect monsoon snack! Ingredients 2 cups soaked chana dal 2-inch ginger 6-8 garlic cloves 2-3 green chilli 1/2 tsp cumin seeds 1 tsp coriander seeds 1/2 tsp fennel seeds 1 tsp black pepper powder A pinch of asafoetida/hing 1 cup chopped onion Salt to taste 12-15 chopped curry leaves Chopped handful of fresh coriander Method Wash the chana dal 3-4 times in fresh water & then soak it for 3-4 hours. Once soaked, discard the water & add the chana dal, ginger, garlic & green chilli into the jar & grind it until you get a coarse chana dal paste, use pulse mode to grind the dal & open the jar twice or thrice to mix the ingredients for even grinding as there's no additional water added. Transfer the coarse paste into a large bowl, then add all the whole spices into a mortar & grind them into a coarse spic e mix. Add the spice mix to the dal mixture followed by chopped onion, salt, chopped curry leaves, fresh coriander, asafoetida and black pepper powder mix & combine all the ingredients to form a mixture. Shape all the vadas into a roundel similarly & then carefully drop them into preheated oil, don't stir the vadas for the initial minute or two, let them hold their shape & then stir & fry them over medium flame until crisp & golden brown. Serve hot with chutney and enjoy!

✨Macaroni Soup✨ This comforting & delicious macaroni soup will be your new family favourite, especially for this monsoon season! It is super quick to make using an instant pot electric pressure cooker! Ingredients 1 tsp oil 1 tbsp chopped ginger 1 tbsp chopped garlic 1 chopped green chilli 1 finely chopped onion 1/4 cup finely chopped mixed bell pepper 1 cup finely chopped carrot 1 cup finely chopped cabbage 1/4 cup sweet corn 1 stock cube Salt to taste 1 tbsp black pepper powder 2 tbsp soya sauce 1 tbsp vinegar 2 tbsp tomato ketchup 1/2 cup semolina macaroni 5 cup water (2 tbsp corn starch +2 tbsp water) Corn Starch Slurry 2 tbsp chopped coriander Method 
Heat oil in a pot, add garlic, ginger, onion and green chilli and sauté for 2-3 mins then add veggies and sauté the veggies for about 2 to 3 mins until you smell them good. Add the stock cube, soya sauce, vinegar, salt, black pepper powder and tomato ketchup and saute on high for 3 to 4 mins. Then add raw macaroni and mix well Pour water close the lid and turn the valve to the sealing position. Press the pressure cooker button and adjust the timing to 10 minutes on high pressure Once the 10 minutes are up, wait until the pressure releases naturally. Next, slowly add the cornstarch slurry to the simmering soup, stirring continuously for 2-3 minutes and add chopped fresh coriander. Serve hot and enjoy! ✨Rabri Ghevar✨ A famous Indian dessert of Rajasthani cuisine,which is prepared in almost every festivals and special occasions and liked by everyone! Ingredients Serves-5 ghevar For Ghevar 2 tbs ghee 2-3 ice cubes 1/2 cup refined flour /maida 1 tsp gram flour/besan 1.5 cups chilled water 1 tsp lemon juice Oil / ghee for frying For Rabri 500 ltr milk 1/2 cup condensed milk 1 tsp cardamom powder For Sugar syrup 1/2 cup sugar 1/4 cup water 1 tsp lemon juice For garnish Some chopped pistachios Some rose petals or syrup Method In a bowl ,add ghee and few ice cubes, mix well until the ghee gets frozen, scrap off the frozen ghee,make sure if there is any water in the bowl drain it off,add refined flour and 5-6 tbs chilled water combine the ghee and flour together,to make a batter.Now in mixer add the batter, besan and lemon juice and 1 cup chilled water and grind.Once a smooth and flowy batter is made transfer it in a squeezy bottle,set oil / ghee in a flat bottom vessel, here i'm using almost 5-inch round ring that is almost 2 inch in height, you can use any sauce pan.Once the oil is heated well, pour in the chilled batter in batches, as soon as you pour little batter, is fried in hot oil the formation of bubbles makes those mesh pattern to make ghevar. Once you pour the batter little by little in batches for at least 6-7 times, a layer will be formed carefully make a hole in the centre using a wooden spoon or stick, once the hole is formed, pour the batter again in batches in the centre for at least 18-20 times and your ghevar is ready.In a heavy bottom pan, bring the milk to a boil,lower the heat and add condensed milk and cook for 7-8 minutes while stirring now add cardamom powder and cook for 2 more mins make sure the consistency of the rabadi should be little liquidy.Cool down the rabadi and refrigerate it before serving. Set a pan on medium heat,add sugar,water & lemon juice, stir & let the sugar dissolve.Once dissolve bring to a boil and cook until it comes to one string consistency.Switch off the flame and let the syrup cool down. Serve ghevar by pouring some sugar syrup and top it with rabri some nuts and rose syrup and enjoy! ✨Eggless Coffee Walnut Cake✨ This is a soft and moist cake, full of mellow coffee and walnuts flavours.Super easy to make! Ingredients 3 tbsp warm milk 1 tsp coffee powder 1/4 cup yogurt 1/4 tsp baking soda 1/4 cup oil 1 tsp vanilla essence 3/4 cup wheat flour 1/2 tsp baking powder 1/3 cup brown sugar Some chopped walnuts Method In a large bowl add in milk and coffee powder together.Then add in yogurt and baking soda.Mix and set it aside for 5 mins For the wet ingredients, combine brown sugar, oil, and vanilla essence and whisk them with the yogurt and baking soda mixture.Now add whole wheat flour and baking powder with the wet ingredients in the same bowl and bring the batter together. Transfer batter in the pan and sprinkle chopped walnuts all over the top.Bake at 180C for 25-30 mins.Serve and enjoy! ✨Portobello Mushroom Pizza & Mango Chilli Sauce✨ A delicious recipe that substitutes a portobello mushroom for a pizza crust and mango chilli sauce compliment’s so well. Ingredients For pizza 2 Portobello mushrooms,(stem removed) 1 tbsp olive oil 2-3 crushed garlic cloves 1 cup finely chopped onion 1 cup finely chopped tomatoes 1 cup chopped spinach Salt to taste 1 tsp mixed herbs 1 tsp chilli flakes 1/4 tsp black pepper 1 tbsp pizza sauce 1/2 cup grated cheese (mozzarella and cheddar) For sauce 2 mangoes 2 garlic cloves 1 green chilli 1 tbsp tamarind paste 1 tbsp vinegar Salt to taste 1 tsp sugar 1 tsp chilli flakes Method Wash the mushroom and remove the stem then place the mushroom on a baking tray and bake for 5 minutes in the preheated oven. Remove from the oven. In a pan add oil, chopped onion, garlic, tomatoes and spinach and add all spices as mentioned above give it a mix and sauté for 5-8 mins or until cooked. Now stuff mushrooms with spinach mixture and top with loads of cheese and olives then bake for an additional 8-10 minutes, or until cheese is melted and golden. Now for mango sauce, purée mangoes, green chilli and garlic. In a pan add purée and some water to adjust the consistency, then add tamarind paste, vinegar, salt, sugar and chilli flakes give it a mix and cook for 4-5 mins. Transfer mango sauce to a bowl and let it cool completely. Serve portobello pizza with mango chilli sauce and enjoy!
