Why is advice to eat no more than 70g red meat/day? Red meat is highly nutritious, perfect for a coeliac who may have suffered for years with malabsorption.

Red meat over-consumption is detrimental to health. There are non-meat ways to increase iron levels :-)

I am 82. Have been diagnosed with inflammatory myopathy 17 years ago, and being celiacs 10 years. I am on a strict gf diet. The myopathy is untreatable and progresses slowly - can only walk with walker and losing balance is a dreadful fear I live with (or suffocating on a drop of water). I often wander if there was a relationship and which one is triggered the other.

Gluten (particularly gliadin, a gluten peptide) essentially acts as a neurotoxin. It's pure poison for the brain. I didn't have any intestinal problems at all, but I struggled with severe brain fog, memory issues, depression with anhedonia and lack of motivation, drowsiness, fatigue, and a nagging occipital pain that was resistant to all types of painkillers including opioids. I slept 14 hours a day and could barely get out of bed. I started experimenting on myself with different medications in desperate search of relief. Antidepressants like bupropion and amisulpride have given me some help with motivation by increasing dopamine and norepinephrine and I have been able to get rid of nape pain thanks to acetazolamide which lowers cerebrospinal fluid pressure. But no one was 100% effective, it was like taking a daily dose of poison with one hand while trying different antidotes with the other one without knowing which poison it was. I was on the verge of getting some irreversible MAOIs, the most powerful antidepressant medications and wanted also try high doses of IV steroids (dexamethasone) when the turning point was the appearance of persistent dyshidrotic eczema which made me suspect some type of food intolerance/allergy. I used a drastic method: fasting! Only water and electrolytes for 3 days. Eczema gone! But not only that! I felt less tired with less need for sleep and more energy! You wouldn't think so for someone who hasn't eaten for 3 days! It was clear that the poison was in the food and it didn't take long to figure out that it was gluten! Following a strict gluten free diet all symptoms improved day after day!

I have to be completely gluten free other than occasional rice. I cook 99.9 % of my food and as long as I do I remain healthy. It’s taken 30 yrs for my body to heal. Devastating illness.

I understand The lining of our digestive system is gradually damaged over a long period of time when eating gluten, including oats. RE:- Oats, Oatmeal - even if it says that it’s gluten free. (Gluten is used to describe a prolamin protein fraction. This gluten fraction is called gliadin in wheat, hordein in barley, secalin in rye and it’s avenin in oats. And this is where there tends to be confusion with oats - which contain the protein avenin, a gluten protein. So if you’ve ever seen products or recipes like ‘gluten free oats’ or ‘gluten free cookies’, this refers to oats that have been grown and processed without coming into contact with wheat, barley or rye.)

Its an autoimmune disease..if it goes un/misdiagnosed, until age 36, it causes your body to become inflammed, damages nerves of your gut permanently damaging your small/large intestines..progresses to other Autoimmune diseases..i have Rheumatoid Arthritis, Sjogrens syndrome, vasculitis and lung, kidney, heart failure..brain fog, poor because of disability. I soldiered through until i couldnt..doctors labelled me anxious and depressed and gave me sedatives..awful.

Italian cooks insist that you should NEVER NEVER NEVER put oil in pasta water. NEVER! I've known that for 15 or 20 years? Do you ever listen to Italian cooks? As they are the ones that made up the pasta dishes? They all say do not put oil in the water.

I have celiac. My children have hldq2 and one has hldq8. My child with hldq2 has a friend with a celiac mother, but does not eat gluten free. Now I am being constantly asked why we eat gf and “ it’s not fair” I cannot find ANY information on what to do if you have not presented with Celiac but have hldq2. My child wants to know why they can’t have it once a week or once a month since they are not celiac. It’s breaking my heart. I’ve explained that it’s about being at your best, you healthiest. They want to know exactly how much they can get away with. My child resents me now because of this new friend. Can you suggest a place to find an explanation that will resonate with a 14 year old? I live in a country that does not believe it affects the people of this country. I’m not from here. I can’t find a doctor to explain the situation.

About 40% of the population has the HLADQ2 or 8 genes. That does NOT mean that they have Celiac or that they need to be gluten free. You only need to be gluten free if you have the autoimmune disorder. If your child's friend with a Celiac Mother does not have Celiac Disease, there is no reason for the children to not eat gluten. NO doctor will tell you otherwise. You really need to see a Celiac Specialist, and take your children with you when you go. Because your kids are really going to be angry and lose trust in you for doing this. I don't blame them. Plus, GF foods are not all that healthy. Now, if you are worried about contamination, it is perfectly fine to keep a 100% gluten free home, but allow them to have it outside the home. Just tell them that if they bring any home, and are not careful, you will ground them for a month (just kidding, but you get the point). Most likely they eat it when you aren't looking anyway.

@@shakeyj4523 Thank you for responding. Where did you get that statistic (40%)? What about gluten intolerant? Do those people have those specific genes? Did I always have celiac disease? Wasn’t I just intolerant before my body went into a full autoimmune disease? By the way my daughters friend was diagnosed with celiac as well as with another auto-immune disease just a few months ago without genetic testing. I don’t think my daughter will be too angry or resentful toward me in the future, knowing what has happened.

@@hhale5652 That's not how it works. You either have an autoimmune disease or you don't. When you don't, gluten won't harm you. You also have to understand that you can get other autoimmune disorders that have nothing to do with gluten. And no, you Non Celiac Gluten Sensitivity (intolerance) is not a stage towards getting Celiac Disease. You don't seem to understand that your immune system can be fine with gluten, and then something triggers it (illness etc) and then you have celiac. What you did before has no bearing on if you will get it. Intestinal viruses are known to be a trigger. So you can keep them from gluten, but if they have the genes, they can still get an autoimmune disorder like RA or MS. But again, don't take the word of a commenter, talk to a Specialist DOCTOR. Last, do you think if you had cancer instead, and you gave your daughter chemotherapy because YOU were ill, would she be upset with you? Don't treat your kids for your diseases. You don't even know if they have the genes for Celiac.

You could have made a pesto sauce quickly to add to the pasta . Lots of basil a handful of pine nuts 3 tbsp pecorino cheese and 3 tbsp extra vergin olive oil, you can put a clove of garlic if you like , salt abd blend everything and the sauce is made .
