I was taught that if you have an excellent cut of meat, you should not put any sauces or condiments on it lest you mask the true flavor of the meat. Save those sauces and condiments for inferior cuts of meat.

Yes milk will tenderize it and make it juicy. But why do you need to do this with a huge prime rib. Any big piece of meat doesn't require injection. whatsoever if its cooked properly. Dry brine is the way to go. It's all about taking the moisture deep in the center and distributing it throughout the entirety. Only wild game requires milk marinade

I recommend using mustard as a binder i personally prefer using a spicy mustard
