My French chef instructor would smack me from beyond the grave if I called those onions "caramelized." He insisted that they had to be a uniform brown and almost disintegrated. To be fair, they're great like that, but it takes a long time to make anything that caramelized (dark roux included).

Anything you add will slightly change the flavor but I'd go with red pepper flakes.
