Love this video, and the variety you are getting to try on a thaali. We grew up having very little to no sugar in our gujerati food, which I think is becoming more common now. the green vegetable looks like giloda which is also known as tindora or ivy gourd. Quite popular in Gujerati cooking. Touch base when you re back home and we can share a meal together .

next time go to grand thakor in ahemdabad there gujarati thali is world best food . that spicy buttermilk was kadhi ,kadhi is made by adding chickpea flour ot buttermilk , brinjal was not there it was tindora another local vegetable of season try eating undhiyu its like all mix vegetables, , that creamy milk was basudi which is made by continous boiling of milk until it becomes thick , that similar to samosa was lilva ni kachori made with stuff peas inside fried dough , another thing at 4.36 was dhokra very famous item of gujarat which is steamed food made from rice dough with some spices .

U need to learn how to eat thali . Puri and roti are base u need to eat every vegetable with a small pieces of roti or puri . Roti and puri u not have to take in whole but in pieces and u can take roti or puri with any vegetable or dal or kadhi. And rice u need to take with kadhi or dal and mix all vegetables in rice and dal and eat with papad .

Try Kathiyawadi thali ...its on the spicy side... unlike the sweet Gujarati thali... Kathiyawad is a part of Gujarat. Specifically ask for Kathiyawadi thali only else they will provide mostly Gujarati..
