Hello, water is the worst enemy of a building, so try to divert it as much as you can away from the buildings. Get a french drain around the buildings if necessary. I'm tackling the same issue on our renovation!

Don't know anything about the making, but "they" say that for final storage, screw on caps are better. I tend to agree in that corks can leak or allow gas exchange. I know that once you open, the wine turns bad if you don't consume it in a day or two.

hi, I have a large grape harvest every year and decided making wine in my basement....I put them in special for wine making damejeannes and also later in plastic vessels with taps...the wine had a rosé kind of color. Didn't taste so bad. I used the waterslots as you showed and kept them full of water. Later I filtered and transferred the wine in the 'special for wine' closed plastic containers with the taps at the bottom. These taps were invaded with small fruit flies. I don't know how they did, but despite the taps being closed - the fruitflies brought in vinegar bacteria and turned the wine into vinegar....So all in all I wonder 'how your Italian methode' with a 'loosely' closed lit can prevent fruit flies and their bacteria/yeasts out as to prevent turning wine into vinegar....

Hello, we use what we have, I covered it together with cement mixer because next day was doing more digging and taking the soil out, garage is full of our future roof timber, when its gone tractor will be parked in there 👍

Hello! I like watching your videos. Here is my comment on wine making: #1 thing is to have everything sanitized. Starting from the fermentation dish to grape crusher , grape press and any other tool what touches the juice. If you guys make small batches then use your crates and wash the grapes too. Your demijhons do need also a very good sanitization, including the rubber plug with airlock. When you rack it sanitize the plastic hose too inside out. I'm not sure what you can buy in Portugal but I'm sure they have all sorts of sanitizers. I would recommend using some non-rinse sanitizing solution because less work and there is no treat to re-infect the jugs or the equipment with well water. Remember, the fermentation process can only kill so much of the fungus and bacteria. Cheap solution is if you can get concentrated hydrogen peroxide and make 1% peroxide solution. It kills everything in half a minute to a minute, provided there is no dried crap anywhere. This one you don't have to rinse just drain it, few drops in the wine doesn't make any difference because has no odor os taste and the small amount will disintegrate anyways. Alternatevily you can buy 1 Step from US by Logic Inc. (www.ecologiccleansers.com/store/one-step/). Very good stuff and good for many things. Many people use metabisulphite solution. It is ok but it can taste in the wine of it is too strong and if not strong enough then doesn't work. Maybe use metabisulphite to sanitize the press, the crusher and primary fermentation tank. The airlocks are cheap and they work well just don't forget to top it up, recomended with metabisulphite water. Here is the sanitizing prportion for using metabisulphite according to miss google: "To make a 2.5% sanitizing solution: Dissolve 50 grams (8 tsp) into 4 L of cold water. This produces a re-useable solution that will last for about 2 months. Keep it tightly sealed in a glass or plastic container only (it will corrode metals). To sanitize simply rinse your equipment and let it drip dry for 10 minutes. "..there you go. You can use this solution to top up your airlock just make sure doesn't get in the wine...or at least not to whole thing. Other thing, once you racked the wine first time you have to add stabalizer, which is metabisulphite. It is recommended to use 2-2.3 grams per 10 liter. Not more, not less. For this you need a precision scale or see if you can buy premeasured little packages. You may find 4g packages premeasured for 20L. I also recommend 0.5-1g/liter food grade ascorbic acid (vitamin C). If the wine already very acidic then don't worry about it but otherwise feel free to use it. It is a very good antioxidant and also good for you. When you get to bottleing then also make sure your bottles are freshly sanitized, including the cork!!! Well have fun and enjoy your wine!

@@portugalitis Hmm. I mentioned only three chemicals and only one of them goes in wine since I don't consider vitamin C (ascorbic acid) as chemical. Out of three two of them are 100% harmless (obviously you don't want to drink 1% peroxide, however if you use it as sanitizer the few drops what left in the glass is completely harmless). You can choose not to use anything but if containers and equipment is not sanitized, wine is not stabalized then it will spoil pretty fast. After all it is your call. I make wine too and I'm using these all the time. I can guaranty you can not taste any of it and all these are literally harmless. I just saw you guys making well over 100 liters and it would be quite the waste. Metabisulphite is the only one which needs correct measurements and you check with any winemaker in the area I'm sure they will agree with the amount I mentioned. We were in Portugal this year and I tried quite few from stores, mostly locals made by cooperatives. I can tell for sure they don't use too much chemicals and I was impressed how good those wines are. There is no point worrying about these chemicals. There are some other chemicals they use to clear and preserve wines for longer shelf life and those are debatable whether you want them or need them. Anyways, it is your call, your wine. Cheers!

Hello, Yet another couple buying in Portugal. Are you in the Castelo Branco county or else where as Castelo is one of the driest counties and very difficult to grow all you need. I am a Brit as well but a bit further north and I still have problems with getting the timing right for growing all the things I like. If yo need any help or advice, just ask as I was a pro, horticulturist in my time in U.K.. Hardest pat here is getting your timing right and your priorities. Seed needs to be in now while you still have water in the surface soil and sort your garden first and then the house while garden is growing. Water storage is also a very good idea if you have only a well. No more rain for at least 1 month.

Above freezing is fine as only beans spuds and toms are affected if it drops below zero. Is up to you , but am just giving you, as a pro gardener, the knowledge of my experience here over the past 4 years and you don't wait for March like you do in England or you wlli only get 1/2 a crop.@@portugalitis

Now you have got a social security number you are entitled to get a tax rebate diesel card to buy agricultural diesel and it does not matter if the tractor is road registered or not as my tractors were UK registered and it wasn't a problem. What they will do is give you an annual quota based on the tractor model, but take photos of it and the serial number

Your land is looking great guys, cant wait to see you getting work started on your small house. I make my wine with Blackberries and blueberries, and find that its best to keep it at a constant temperature during the fermentation period, anything over 30 degrees kills the yeast and you end up with a stuck fermentation, i try to keep it between 20 and 26 degrees, even if it means moving it. once its finished, i rack it off a couple of times before i bottle it, then store it in a upright freezer which i regulate with a special devise i got of Amazon which keeps it at cellar temp 12 degrees. keep up the great work.

Good to get taxes sorted for five years and understood.when I make wine I wash every thing with just clean water,then I get the biggest container I can find, don't make a hole lot of small batches, one or two large drums will give better and safer wine from spoiling, and always use the plastic cork stopper filled with water it makes it much easier to see the Start and finish off the wine.A way to keep Theo's Boar away is to make a few scarecrows and put them here and there on the land ,hang something on them that will jiggle in the wind . Doing a good job with the water,,Guffy looks happy😂🎉

We forgot that we had the 3’rd 50litre container 🤣 otherwise we would use it instead of those 5litre ones, all our roof timber is stored in the garage it’s a proper mess in there 👍 regarding the wild boar it’s good news that they don’t come to the part of land were our caravan is, before we moved they use to dig all over the place, probably they sense dog, and us now

Yes, a french drain would be good idea wherever you are experiencing water or damp coming through your home. Guffy sure loves it when the tractor starts up.🐾🐾🐾 Question: Is there a reason why you let the tractor idle when you're filling the bucket? It seems like it would use up more diesel than if you were to shut it off then when you're ready re-start it up again. We will address that water issue seriously, it has to be done once but properly regarding the tractor idling just want to save the battery, at this current weather engine gets cold very quickly and I need to use glow plugs each time, on this old boy you have keep them on for about 20 sec before attempting to start him up, diesel consumption is ridiculous on it, since we bought it in April we used it a lot, it shows in our videos I think 🤣 pulling rocks from the ground, cutting grass, plowing etc etc, and Im trying to remember if I put 40 or 60 litres of diesel in it in total, in 8 month time!!! So 2 or 3 jerry cans it took in total 😁

About the car tax -IUC that was me that wrote the tax is 70.50 euros in 2023 and that is correct if your car was considered a passengers car ; if it´s considered a comercial mixt - passengers and merchandise- the IUC for 2023 is 34,16 euros with a diesel motor less than 2500 c.c. and 56.57 euros with a motor over 2500 c.c. ; about the car insurance a I´m absolitely positive about that ; any portuguese citizen in order to cancel the contract with a company ust don.t pay in the due date and the contract it´s automativ canceled without penalisatiosn at all it´s in the Law.. ; of course if you a want be polite with the company you could talk to them / sne them a letter or wahtever to give notice of your intention to cancel the insurance ....in the end the result is the same...

Ну , очевидно же , что под водяным затвором вино будет лучше . Я удивляюсь на португальцев как они делают вино - в старом сарае , в старом бетонном корыте , нарубили и оставили на месяц ... В жару , с мухами , с непонятными бактериями в воздухе.... И получают как бы вино . Некоторые англичане в сусло еще и сырое яйцо бросали. А под гидрозатвором только дикие винные дрожжи и ... и все. И , кстати , не факт что будет нормальное вино. Это магия .
