I have done exactly for 40 years and never ever lost a single jar of tomatoes !!

I don’t cut X’s or nothing. Drop in boiling water and just watch them til they start to get a split on the skin. Each one will be different depending on size of tomatoes. Once you see it split scoop it out and put in a big bowl. Do all your tomatoes same way. Let them cool to where you can handle them. They peel SO easy. Skin wrinkles upon cooling and Practically falls off. Core then and can them.

Don’t use iodized salt! Only sea salt, hymalayain pink salt, or best kosher salt.
