I love chef Tam, he just looks so friendly, he did not act tough to intimidate the boys unlike any chef they met in italy. And i love that Ollie stuck to his opinion that he didnt like the bone marrow texture and told the chef, no butt kissing needed, and Josh at 5:10 you can just smell the food, no need to snort it 😂

For anyone wondering, it’s not usual to use two chopsticks in a Chinese restaurant; the extra chopsticks are communal, and used when sharing dishes. Typically, there isn’t a color difference so you just need to be careful at more formal meals. I really like the innovation with blue and yellow chopsticks!!!! That way it’s easier to see that someone is indeed using the communal chopsticks. ❤❤❤

I was thinking about that after I watched it and was running some errands. Like, it is not just that they get access to this stuff, but consistently people actually want them to come back to film again. David Beckham ironically is the reason this whole series exists because he loved his experience with them the first time so much, he wanted them to do one of his interviews in Macao and they did that on their dime, and then the Macao govt tourism reached out and asked them to come back sponsored. Then this episode if you have them on instagram they actually got invited back on the same day they filmed this and Chef Tam treated them to an epic supper as well with the whole crew. It warms my cold heart it does.

Change the menu every 2 weeks is absolutly doable. I worked for a michelin star chef for 3 years (quit because it was too intense of a job for my taste) and we changed the menu completly every 3 days (6day weeks, half week menu, closed on mondays)

Bird’s Nest - is the spit that a specific species of bird uses to make its nest out of. It’s a delicacy (& dangerous to harvest). My mom made me drink it during my entire pregnancy (old Chinese custom). They cook it in a soup with rock sugar and it can be slightly sweet - but you have to get over the fact you’re eating bird spit 😂

It's one of those delicacies also popular in El Nido, Palawan in the Philippines (hence the local name Nido Soup) and yes it's made out of a Balinsasayaw bird's dried saliva harvested out of those caves there.

I wonder if anyone told them what the "birds nest" was in the dessert with snow pear. It's actually from a Swallow's bird's nest that's made of hardened bird saliva and turns to a jelly texture in water. Highly prized in chinese cuisine and medicine it's also extremely expensive for its rarity.

for those that don’t know, the bird’s nest they served for dessert is actually the saliva of a swiftbird. swiftbirds used their saliva to make their nests intact, and is made into a noodle like shape and served as dessert. it is quite expensive, but really, it just tastes like jelly. other flavours would have been used to create that dessert served to them.

I think one important thing to know about Chinese and East Asian cuisine in general is that texture is far more important than in European and American cuisine. Asian people see texture as important as flavour. That’s why there are famous popular foods like mochi, bubble tea, and tteokbokki. Even though those ingredients in themselves have no flavour, they add TEXTURE. That’s also why some Asian foods might seem weird or scary, like fish bone marrow or chicken feet, but it’s because it’s impossible to achieve the same variety of texture just by eating plain old animal meat. Western cuisine focuses heavily on flavour but comparatively deprioritizes texture

Most of the food in this menu is extremely expensive, and has good nutritional value - these are food that Chinese people enjoy, to an extent, for health purposes. The sturgeon bone marrow and sea cucumber, are both rich in collagen. I would agree that some of those food are an acquired taste to an extent, but also, the process to make some of those food is extremely laborious. To make the bone marrow, sea cucumber and abalone into an edible soft texture, takes many hours of cooking. Most of these foods also don't have much of a taste to begin with, so to cook it in a way that is appetizing, is an immense skill.

ok now youve made it...not only did they open the restaurant but they opened the gondola, and the dancing fountain just for jolly!!!! amazing. chef seems so down to earth too, what a baller

Has British Born Chinese I have a little fact here: So Bird Nest is also known has swallow nest, rather from being made from twigs and bits of moss, swallow nest is made from the hardened saliva from swiftlet nests and dissolved in a broth. It also known to be expensive ingredient as so the Abalone. It is aslo said that Birdnest soup is good for your health to helping with your immune system. So my mum would make this has, a dessert (Dong Sui which litterlt transalate to sugar soup)

I swear if KZbin existed in the early 2000's and China didn't ban KZbin, we would have had I ride, I have eaten in about 20,000 restaurants in China and probably had over 300,000 different dishes. As much as this entertaining, its barely scratching the surface.

Well this was a ride haha. So cool to see all of the cuisine and specific dishes Chef Tam prepared for you guys! Also, thank you for continuing to censor some of the less… “enjoyable” noises with falcon (eagle ?) cries! IDK if it was because of a previous comment I left but that helps so much and I (as I’m sure anyone else with emetophobia or an aversion to those kinds of noises) appreciate it greatly 🙏 Been loving this series
