I had Civet Coffee when I was in Vietnam and bought me 1/2 kilo back home clueless to the fact that my own country the Philippines also has this particularly in the Mindanao island. Vietnamese civet coffee is sweeter, while in the Philippines it has a bolder and creamier taste to it. But...but...but...after reading about it years back I do discourage patronizing it. These animals are caged and are made as factories just for a cuppa coffee. And the farming is not sustainable at all!

The civet coffee that come from Sagada Philippines is still the best coffee in the world. Served only in Sagada and the fancy restaurants in New York. The reason for this is because the civet coffee poop is collected in the wild, thus making the supply very low. But making it the best because the civet cat eats every berry, palm fruits and everything the forest has to offer mixed with arabica coffee beans. That makes the most expensive poop. $1000 to $5000 dollar a kilogram depending on the fruiting season of forest trees and berries and shrubs.

story is he was working at a coffee plantation and wanted coffee but they harshly punished any worker who took any coffee for themselves, but he found coffee in civet poop and since it wasn't being used he went picking the coffee laden civet poops, washed and roasted the beans and made coffee out of it, discovering it was better. The rest, as they say, is history.
