Hey Emmy, I can't believe that something from my childhood is considered genius 😂 I'm in my 50's and any poor little black kid from the Southside of Chicago made this when we wanted ice cream but our parents were like wait til the weekend. Or we had to wait until payday, in our family in particular 😁. We also froze Coca-Cola and Kool-Aid until they were ALMOST completely frozen so that we could have Icee's. You are right that the longer the milk is completely frozen the better it is to make ice cream. It wasn't soft serve then, just homemade ice cream from a blender 😅

This looks like so much fun. I enjoy using frozen banana and just a little half & half, with cocoa powder for chocolate flavor. Very thick and rich-tasting, but it needs an emersion blender, or just a spoon and elbow grease, to get that texture, otherwise adding enough liquid to blend it in a blender can make it icy.

You can also shake the ice cube tray a little to have the contents spill into each other's recess and it levels out to make each cube more or less similar size. I assume that was the intention when they put the little notches between all the recesses.

I've made frozen popsicles with freezing pudding. My favorite 'I need a milkshake NOW' but don't have ice cream at home is just putting milk (1%, 2%, or whatever) in a food processor and whipping it full blast. Near the end I sprinkle some instant cocoa powder and quickly pulse that in. It is a large 'imitation' milkshake that you have to drink immediately because the whipped up bubbles turn back into flat milk. It probably works in a blender too, but only tried it in my processor. Yum.

In the mixing process just add four five tablespoons of reddi whip or cool whip for a softer consistency. The reason why there's ice crystals is because it doesn't have enough lactose to create the chemical bonds to make it thicker.
