I use 1 cup dal 2 cups rice and 1tsp methidana. Always works plus more dal is less sugar spike.

Do you mix rice and dal together while fermenting or separately ferment ? Does it work with normal parboiled rice of any kind or any special rice is needed ?

I ferment dosa batter for in my stove oven with oven lights on . The lighting bulb heats up inside and dosa batter ferments exactly what I need . Not only this I always make home made yoghurt with the same concept but for 6-7 hours Dosa batter may take 9-11 hours

Hi. To ferment dosa batter in winter using an oven, follow these steps: 1) Prepare the dosa batter as usual. 2)Place the batter in a large, oven-safe bowl, leaving enough space for it to expand during fermentation. 3) Preheat your oven to 100°C - 140°c for a few minutes, then turn it off. This provides a warm environment for fermentation. 4) Cover the bowl with a lid or plastic wrap to trap heat and moisture. Place the bowl in the turned-off oven. 5)f your oven has a light, you can turn it on to generate a bit of warmth. This can help maintain an ideal fermentation temperature. 6) Check the batter periodically to ensure it’s fermenting properly. This process may take longer in colder temperatures, so be patient. 7) Once the batter has fermented and doubled in volume, remove it from the oven. It should have a slightly tangy aroma. Remember to monitor the batter regularly to avoid over-fermentation. Adjusting the fermentation time might be necessary based on your specific kitchen conditions. You can use lukewarm water while grinding and then keep the batter in the microwave oven to keep warm and there by ferment well.

Good recipe but its not Mexican Nothing about it is Mexican Yes we do have frijoles(made from beans) in Mexico but they are not made like these exactly... Anyways good recipe
