INGREDIENTS:
* Rice(चावल) - 1 Bowl
* Oil(तेल) - 1 Tsp
* Water(पानी) - 5 Cup
* Salt(नमक) - As per Taste
* Hot Water(गर्म पानी) - 1 Cup
* Borex/Suhaga Powder(सुहागा पाउडर) - 1 Tsp
* Baking Soda(मीठा सोडा) - Less than 1/2 Tsp
* Oil(तेल) - For frying
For Masala:
* Chat Masala(चाट मसाला) - 2 Spoon
* Crushed Red Chilli(कुटी हुई लाल मिर्च) - 1/2 Tsp
* Black Salt(काला नमक) - 1 Tsp
* Dried Mango Powder(अमचूर पाउडर) - 1 Tsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tsp
RECIPE:
Soak some Rice for 4 to 5 hours & then drain out the Water. Keep the pressure cooker on the flame, put some Oil & soaked Rice & saute them. Then put some Water, Salt to taste in it & mix well. Cover it with a lid, give it 2 whistles & then cook it on a slow flame for 10 minutes. Then release the pressure & mash it with the wooden masher/whisker. In a bowl, take some Hot Water & put some Borex/Suhaga & Baking Soda & mix well. Put the Borax mixture in the cooker & mix well. Then put the mixture in a cone & make long sticks on a plastic sheet. Keep them in the sun & dry them properly for at least 2-3 days. Then fry them in the medium heated Oil.
For Masala, in a mixer jar, put some Chat Masala, Crushed red Chilli, Black Salt, Dried Mango Powder & Kashmiri Red Chilli Powder in it & grind well. Sprinkle some ground Masala on fried Kurkure. Mix them properly and the Very Tasty and Crispy Kurkure will get ready so easily at home. You can enjoy it for a long time by keeping it in an airtight jar.
