Cool video. As a european classic muscle cars arent something I can afford due to the lack of them here and the price on them, but Im sure a lot of this can also be applied to local classics like the E30 (known to rust like hell, hence theyve gone up so much in value).

Look at the aftermarket parts available. Frame rails, doors, Panels, or whatever are plentiful for that first gen mustang or first gen camaro. If you find a mustang 2 or weird car like a cheap first gen charger or barracuda that needs a lot or is missing a lot, that stuff isn't always available so you'll need to fabricate or find expensive used parts.

True the problem becomes expensive if you don’t do the work yourself. I suggest to only buy a classic car that has aftermarket parts available.

Any manipulated vin/firewall plate (new rivits, sheet metal screws ...) in the 70s ANY new plate could be had at any larger car flea markets - the guys had simple hand presses and your moms lemans could be a well optioned GTO, mustangs were easiest to falsify. Big block corvette became common despite few being ordered new and so on.
