We are Austin & Sarah.
The two of us grew up as city kids and after we got married realized we dreamed of living a simpler and more self-sufficient life in the country. We packed our bags and bought our little piece of heaven in the beginning of 2021. This channel exists to document our journey of learning how to live a more self-sufficient life.

My secret for large potatoes is that I add a foot of straw or leaves on top of the soil. It helps with the moisture level in the soil and makes it a lot easier to harvest. I was never able to grow decent carrots, though, usually they are short or they split (most likely because I don't have an irrigation system and the weather is weird in my corner of the world). Love your property and I like to see how happy you are!

It's not neglect, it's a lot of work maintaining a large garden, I'm having the same problem, I'm building my chicken run right now, it's going to have a pergola roof, and I'm going to grow a passion fruit vine to create shade and future chicken feed and fruit for me.

When harvested the carrots try pushing down before pulling up, ive not tried this but saw on another youtube channel, but great harvest and clean up.
