The cutting board isn't for you its for you're knifes. Cutting on metal or marble will dull your knifes like crazy, as you can see his knife was really dull. It also helps when chopping because the marble surface is slippery and you can't shop correctly.

Then he holds the knife with the glove and cuts the lemon holding it with his bare hand. The gloved hand is in no danger of being cut, yet the hand holding the lemon was not wearing a glove, which defeats the whole point. I literally can not break it down any further for you.
