It's called cardistry and it is an art form that branched out of card magic. Cardistry moves are rarely used in card magic due to their flashiness and seemingly unnecessary mingling with the cards, but you're right about the "shuffling the cards" part. Most of them are technically cuts, and some of those, like Level 3, which is called a card spring, maintain cards in the same order.

Most of these are false shuffles that by performing them you literally proving that you shouldn’t be the guy doing the shuffling lol. The first one is the only real(ish) one, cause if you can do the others you can control what’s happening faster than it can be perceived for the most part. It’s flash and misdirection, even the first one can be faked but at least no one is going to question it.
