Thanks for this enlightenment! It really goes a long way… a quick question ma,how many days can a vanilla cake stays out of fridge and is rum spirit ok for preservation?

Vanilla cake shouldn’t stay, more than 3 days outside the freezer. Yes, rum is good. Also, adding a little lime or lemon is a great preservative.

Quick question please. If I’m following a cake recipe but i decide to reduce the amount of sugar to suit a diabetic person .. will it ruin the cake?

The texture of the cake will change. Sugar is acts as a cake softener. The moment you reduce the sugar, the cake won’t be as soft as you might want. Sugar also serves as a preservative. Instead of reducing the sugar, bake let’s say, an honey cake recipe. I have one here on the channel. It is a bit more healthier. That said, a diabetic patient shouldn’t be eating cakes in general. It is not just about the sugar but the white flour as well.
