Zucchini/courgette spaghetti always turn out soggy and are a lot of work in my experience, a box grater is the best way to spiralise them. As an alternative, I absolutely LOVE enoki mushrooms spaghetti, the mushrooms look like long thin noodles, they taste amazing and are very low cal/fat. Your local international supermarket might stock them and they're amazingly good. I cook them in the usual tomato base I use to make any soup/casserole, etc., it makes everything tasty: chopped tomatoes (or fresh ones if you have them), onions, garlic, fresh basil and/or other herbs, e.g. thyme, mixed herbs, dried will do if you don't have fresh ones. I season with crumbled veggie stock cube at table, not during cooking. TIP I buy frozen crushed garlic, which in the UK is now available from several supermarkets, my favourite brand is TAJ and it's very cheap too, no more fussing with the garlic press

Thank you for the great tips! I had no idea that flax goes rancid so quickly. I will be buying whole seeds and grinding them as I need them from now on.

Is oxidation a problem with hemp seeds too? I have heard a number of times that whole flax seeds cannot be digested and goes right through your body so they must be ground. Is this also the case with hemp seeds? I use whole hemp seeds.

I love lemon in place of extra salt! Also the brine from banana peppers or pickled jalapeños is so delicious in soup!

A really good stand-by to have ( in reserve ) is " Cajon Trinity " It is a Combination of; " Celery ( Do Not Discard the Leaves > they have the stronger flavor ) " / " Celery, Bell Peppers & Onions ". This is a versatile combination, " Celery & Onions " is the " Base Flavor " for " Bread Stuffing " ! If you use only " Bell Peppers " and " Onions " the people walking by your kitchen widow will say; that it smells like a " Fine - - Restaurant " ! By the way some people call it " Holy " Cajon trinity " It is Not ! / Only God is Holy ! And Trinity means something of the number Three. / [ On the Bell Peppers I don't the green ones. / Onions each to their own purpose. ]

I'm confused. I thought rye flour has gluten. I am gluten and dairy free because of Hashimoto Autoimune condition.

If you can't do rye, opt for a version you can do :)
