Yep, the deadpan humour and deliberately ‘homemade’ recipes is what makes these videos so good. And as proven in a couple of videos, he can actually cook and has really good cooking ability when he actually tries. 😂 It mocks the over the top, over produced cooking shows and videos with expensive/hard to get ingredients so well 😂

Tip for the fried egg: ensure your skillet is both non-stick, AND has a decent layer of oil/fat on it. You wanna be able to spoon the fat and baste the egg with it[this will cook the top faster and ensure not overly cooked yolk] I tend to use a smaller skillet as well, too much surface area and the oil won't be deep enough Lastly, to make sure it doesn't stick, once the whites start to set, wiggle the pan a bit to loosen it and let oil underneat

I think the pan (grey coating) you're using is a ceramic non-stick pan. They'll start losing their non-stickiness after a while and will become incredibly sticky. That might be the issue with deglazing the pan.

Egg boiling tip: while you're waiting for your water to boil, put the eggs in a bowl and cover completely with hot (tap) water. The reason the eggs crack in the boiling water is that when they're cooked straight from the fridge, it shocks the water in the shell and causes it to rapidly expand. Covering the eggs in water helps some of the air to escape from the egg while also warming up the egg a little so that the temp difference isn't so extreme. If you're looking for a runny yolk you'll probably have to knock 30-60 seconds off the cook time to account for this, but just play with that until you have the timing right.

For a good coconut flavour without adding liquid, I prefer to use creamed coconut. It comes as a brick in a box. I add a bit of that and let it melt as the water boils and it turns out juuuuust right. 👌✨️

for the boiled egg to not leak, here's a tip: drive a pin on the bottom of the egg before boiling it. just puncture a leave a small hole. the egg will not leak there, don't worry. It just helps relieve some of the pressure as you boil the egg. as for the mapo tofu, after putting the slurry, add a bit of sesame oil to make it more authentic. Not sure why you skipped the tofu entirely though haha. As for the coconut recipe, the only way I could see it work is to not take short cuts with it (like just dump coconut milk lol). You probably have to build its flavor for it to work, like stir fry some garlic paste, lemongrass, ginger, chili, and shallots/onions (everything paste actually, like use a mortar & pestle or food processor). Then add the coconut milk and let it simmer a bit. This is almost like laksa. But yeah, straight up coconut milk and squeezing some citrus is not gonna work as is.

For boiling eggs; place the eggs in the water as it water heats up. Then, from when the water is boiling, a slightly runny egg should be about 6 minutes. That way the eggs don’t crack under the change of temperature. Hope it helps :)

Your grey pan likely has micro scratches in the non-stick coating from using plastic or metal utensils on it or cleaning it with abrasives(steel wool or dish scrubber) which could be why your eggs stick and why the fond never comes out no matter how low your heat source is. Better to toss it and use a different pan as once the coating is scratched it will just continue to stick and eventually start to flake off into your food

Pan steamed is how I always make my instant noodles. I add the whole seasoning packet and half water and half milk. Also add an egg if i have em. Turns out great, the milk dulls the spice and salt and makes it creamy. No plates and extra dishes to wash Also quick and easy

my favorite way to make it : add spinach and the juice of one small lemon to the bowl youll pour the hot noodles into (this just ensures that the spinach doesnt get overcooked- it creates a nice refreshing texture to have with the hot noodles) then add extra dried mushrooms of your choice to the boiling soup base. cook the noodles as normal and poach an egg in the last minute of cooking. pour hot noodles over cold spinach and lemon juice. add hot sauce if you like it spicier. its soooooooooo good.

For a real "okonomiyaki style" noodle, you need the okonomiyaki sauce! that sauce is how you get the okonomiyaki flavour. First, cook the noodles with less water and some seasoning packet (Don't use all as the okonomiyaki sauce is very salty) Then add an egg (maybe more, depending how much noodle you have) with the cooked noodles and pan fry it until it resembles a noodle pancake Finally, top the pancake with okonomiyaki sauce, kewpie mayo, seaweed flakes and bonito flakes (Katsuobushi)

My personal favorite addition to shin ramen noodles is Habanero Tabasco + some sweet(&sour) chili sauce. Similar to the ketchup they add this nice sweet and acidic contrast to the spice of the noodles, with the tabasco re-adding some of the lost spice as well as providing the acidity that pairs so well with these noodles. I personally just add those two after the noodles are done though.

The cream of mushroom is my favorite easy instant addon. To make it look prettier and creamier.. you heat the soup up first and then slowly add the water in while mixing. Blends so much better.

the okonomiyaki hack looks closer to yakisoba since okonomiyaki is more of a savory pancake, so it should be fried or have crispy bottom. but even then i don't think the flavor of shin ramyun lends itself very well to either dish !

Try adding a pinch of salt while stir-frying the onion on low heat, it helps to release the moisture from the onions (via osmosis, yay science) which can help deglaze the pan. Low heat so that all that water released doesn't evaporate too quickly :)

For the coconut one, just cook the shin ramen as usual, but with 1/3 less water. At the end add 1/4 cup of coconut milk. Bring to a boil, and done. It’s really good this way.
