To be wagyu beef it has to be from Japan, specifically from one of 4 different cow breeds. It’s just a cheap grade wagyu though. The American equivalent is not called wagyu, it’s a different breed of cow entirely, but it can have similar marbling patterns

To be honest I don't think he knows a whole lot about food given some of the "techniques" he uses while cooking and general lack of knowledge for basic things. It's sorta frustrating sometimes. I wish I had a better kitchen otherwise I'd make my own videos. Also wagyu is just the name of the cow. Any cow can be "wagyu" as long as it's that bread. The quality of the fat and marbling is really what your after not the breed of the steer.

Not his fault.. I constantly pull all nighters and it's currently going on 3:30am right now. I run a small business single handedly and my upstairs neighbors make my life absolute hell. The only time I can sleep is at 8am when they are all finally gone for school and work. I would much rather sleep in until 2pm than go to sleep at 8pm or wake up at 6/7am with them. I'm a night owl and it's more fitting for me and my motivation (or lack thereof) and I think people greatly underestimate insomnia or an active nocturnal mind

Use an instant read thermometer. If you're gonna cook such an expensive cut of meat, at least make sure that internal temperature is at the right temp. Anywhere from 122-130 would be amazing. (I like 124)

Why did you get a ribeye?!? The steak used in Chateaubriand cut is the thickest part of the tenderloin or filet mignon. You won’t get the same tenderness or flavor profile from the ribeye. Ribeye has a completely different texture and marbling than the filet so the sandwich wouldn’t work. If you wanted to use a ribeye for a sandwich you would need to cut the steak after cooking into thin strips.

@@lannisterfilth Its actually not a bad way to go with Wagyu or other expensive highly marbled steaks that are very thick cuts. The goal is to sear the outside and leave the center very rare so that the fat in the marbling doesn't render out. By coating the steak in breadcrumbs and deep frying, you can get a nice crust on the outside without bringing the center temp over 120-125 degrees which is considered rare at most high end restaurants. The reason these steaks are so expensive is the quality of the fat in the marbling which is supposed to melt in the mouth when eating. If you grilled or seared the steak on cast iron, the fat would render out due to the higher temps of that kind of cooking.

That wasn’t a cut of Kobe wagyu, the marbling would have been much higher. That marbling is was imparts the flavor, juiciness, and tenderness of a wagyu steak. And you chose the wrong cut of beef! A chateaubriand is basically the thicker part of the beef tenderloin, where the filet mignon comes from! Ribeye is known for its flavor, tenderloin is known for tenderness. Try it again for the sake of your tastebuds trying true wagyu chateaubriand. That stuff is pure magic.

Wagyu refers to the cow; so it IS Wagyu.. just not the best version. He got the cheapest cut of Wagyu meat. In the end, Wagyu is still a cow, different parts of the meat have different levels of marbling. He picked a part with less marbling.

Deep-frying a $75 steak just seems like a bad idea. The outer edges of the steak are going to get super chewy and overcooked and the inside is going to stay totally raw. I like my steaks medium-rare, but that was a bit much. (BTW, your concealer game is STRONG, David. We won't tell anyone your secrets.)

Waiyu beef isn't supposed to be cooked fully like a regular steak, and that is why it looks raw in Tasty's videos about the sandwich.

I have an amazing brownie recipe I perfected, 1cup white sugar 1cup brown sugar Pinch of salt 3tbsp cocoa powder 4oz semisweet chocolate 4eggs 1cup softened butter 1tsp baking soda 1tsp baking powder 1tbsp vanilla extract 1cup flour Place sugars, eggs, and salt in a bowl, beat 5 minutes. Melt butter and chocolate. Mix cocoa powder with egg and sugar mixture. Add chocolate butter. Add flour, baking soda, and baking powder. Bake at 400 degrees for 25-30 minutes. Bruh whoever invented this recipe, I got something to say. You’re a terrible person for using wagyu this way. It’s one of the rarest meats ever and you deep fried it. You also got totally ripped off on that steak. It’s nowhere NEAR even American wagyu, let alone Japanese wagyu. It has a darker color in the fat, and virtually no marbling.

Wagyu translates to Japanese Beef, as in Wa translating to Japanese and Gyu translating to Cow, so getting Wagyu means nothing as it refers to all Japanese cattle, it all depends on the rating you get, the letter referring to the amount of meat you can get from the cattle and the number going from 1-5 for the quality, so A5 being the best you can get

The bread most commonly used is Shokupan, which is a milk bread that you can buy at any Asian supermarket, it comes pre sliced and is also the best thing for grilled cheese too, and to find the meat, search for the rating of wagyu you’re after, as in A5 (if you want the most expensive and highest quality) but yes you would need to import it for it to be “wagyu” I.e Japanese Beef

Here are my thoughts: I use a multigrain bread with the whole grains for crunch, avocado mayo, I use just salt and pepper and cook my steak usual, then slice it into thin slices, those go on my bottom bread slice with avocado and tomato. Then another slice of bread with mayo. So much better, and no frying.

I think the main problem here is that your steak is VASTLY different from the steak in the original WorthIt video :D Even the steak in Nikki and Andrew's video is very different from the original, and that's just due to forces out of your control. David make your own recpie of something. It would be great to see you experimenting. You can take something easy and make it. Like your favourite custom cookies, maybe make them fancy so they could fit in another catagory.

That was definitely not a real wagyu steak btw. There was barely any marbeling. Real wagyu should fell oily to the touch and may come in a package with dry ice. Also, for wagyu 75$ is really cheap. It would usually be at least 200$ for a steak that size

Chateaubriand is just a method of cooking tenderloin (the cut from which you get filet mignon) and if you want to get some actual Japanese, Australian, or even American Wagyu you're almost always going to have to order it online.

Had to rewatch tastys video. Forget the fact that this is a cheaper cut of wagyu, for a second, using a Rib eye steak for this was the wrong call. The outside cap is tender, but the inside tends to be a tougher piece. Not an ideal choice for this kinda sandwhich

David, there were a few ways you could've gone about cooking the steak longer other than putting in back in the grease and it might've come out better.

I wish I found this video when it came out because I have a place that I go for all my Japanese items both food and fun and you are only 45 min away from me so the trip would only be 30 min more. It's a place called Mitsuwa in Edgewater NJ. It is my personal Japanese Mecca and I think you would love the opportunity to expand your food horizon there. 😊

This recipe just confirms what I already knew.... Katsu is legit just Japanese BBQ sauce... Ketchup, worcestershire and brown sugar, and instead of red wine vinegar you add soy and mirin...

if you don't feel like using wagyu beef use pork chops. this sandwich was a fast food dish that is tonkatsu. which is just a fried pork chop sandwich.
