nless I'm mistaken the Whiteout is Imperial's version of a Wit yeast. That yeast is going to impart a decent amount of its own unique character which is an interesting choice where you're trying to see what you get from this raw wheat ale with the hop tea. Wit and Hefe yeasts will go crazy like that and you usually need a blow off tube! "It's a weird beer." Stay weird! I'm impressed by the variety of things you keep trying. Nicely done.

Up until recently, the yeast character has mostly been hidden by the hops, but as they fade more clove is shining through. We’ll be tasting three takes on this style in BBR soon. Cheers, Don!🍻

I love raw beers, I just recently did a raw mixed fermented Berliner Weisse with 66% containing malted wheat, flaked wheat and flaked spelt and the rest was an old heirloom variety of malted barley. I also mash hopped with whole, aged hops and pulled a little decoction. I did it four years ago and it came out great, so fingers crossed that this will be as good. Why do we boil? Is that to really sterilize things and do an enzyme reaction?

The mash enzymes are denatured by the heat of the boil. There are a few reasons brewers boil the wort: sanitization, protein coagulation for clearer beer, hop isomerization to increase bitterness, volatilization of DMS and other compounds, and concentration of the wort by evaporation. A simple boil isn't hot enough for sterilization. You'd need to use a pressure cooker.

Why don’t more companies do 100% wheat? Is it too gloopy or something? I thought it would be inefficient.

Wheat is very sticky in the mash tun. In fact, my runoff got stuck, and I had to remove the bag to collect all of my wort. Using rice hulls can help, but you'd have to use a bunch to do 100% wheat in a traditional mash tun.

Ah the beer described by Chris Colby as "Ummm...hehe..ahhh...yeaaah...it's OK." Sounded like a tasty recipe to me but I did laugh out loud at "This one has a lot less of that character that I didn't like". He is nothing but honest.
