You hear about influencers but think it can't happen to you. But I've just been "influenced." Until I saw this video Pumpkin bread wasn't on my radar and actually didn't sound that appealing (squash sourdough?), even though I enjoyed the presentation. Despite that, a couple of days after I watched this I suddenly found myself compelled to use the old pumpkin I had lying around to make bread. Came out great, even got some pretty decent oven spring which I wasn't expecting. I upped the hydration, increased the percentage of starter, and used cinnamon and ginger for the spices. Thanks for the inspiration!

Love it Elly! Got quite a few pumpkins just picked from my allotment here in the Netherlands so excited to give this a try. Funnily enough about a week ago a hated a gorgeous video from an Azerbaijan family where they film all sorts of traditional country recipes and practices (gorgeous channel!) and the lady made about 10 loaves of pumpkin bread (actually I think 5 were with spinach purée now I come to think of it) so it was on my mind to give it a try. Unfortunately it was with all white flour (what a shame!) so I’m super happy you’ve done the work for me in working out proportions with wholegrain flour. BTW I love your birdies! Makes me homesick….xx

I was all excited when I heard you say pumpkin... and then use a butternut squash! It's all good. Squashes, pumpkin, zucchini, all work great in bread recipes. I do cook my own pumpkin though and either use fresh or rehydrated from dehydrated, in baked goods. I think I'd like to try these as dinner rolls, bet they would be great!

Just baked this bread this am. Elly. It looks fantastic, & is cooling now. I also ordered a Mockmill from Canada, using one of your links. Thank you for your Mockmill video. It was very helpful in helping me finally decide to go for it! I make all my breads, so I think the mill will be great to use.

Hi Elly! Yay! The recipe is here! I have been looking forward to you getting it on your channel. The Butternut Pumpkin you are using is a Butternut Squash where I live. Looks like it, too. Nevertheless, it does indeed look delicious, especially when you sliced it and showed what it looks like on the inside. While I have been making homemade breads for years, Sourdough is new to me. So, I am watching your videos on getting the starter going, and such. Thank you so much for sharing your recipe with us!

Hi, thank you, that's exciting! Yes I have, and it's wonderful either way, but whole grain sourdough loaves in pans tend to be a bit more dense than free form loaves, especially with loads of pumpkin added! You can do it though, just as easy :)

i roast winter squashes whole. When cool, it is easy to cut, scoop out seeds that are cooked and plump. The skin may be edible to eat right then or blend it . The meat of squash is tastier when roasted whole and I have less waste. Baker’s treat is the flesh scraped easily with a spoon, from skin

It looks wonderful and I can’t wait to give it a try! Curious - you mentioned playing around with your oven convection vs fan if I heard correctly. Is fan on and convection the same or different on your oven? I hear “fan on” or “fan off” in some cooking video descriptions and I’ve always thought they *were* talking about convection (which would be convection=fan on?) but now I’m not sure…..

I tried to research this and it appears all these terms mean different things in different countries! With my oven (Smeg - Italian brand) 'convection' means just top and bottom heat, 'fan forced' means smaller element at the back of the oven with fan pushing the heat around. I couldn't tell much difference with a DO baked loaf, aside from the bottom being a bit darker than it is when I use the fan setting.

fyi butternut squash has a lower water content than pumpkin (meaning the round, orange winter squash that's used to make pumpkin pie in the US).

Yes, they do vary. You may need to adjust. I thought it was the other way around though. The pumpkins here seem drier than the winter squash. It's not going to be a standard thing, they will vary a lot crop to crop.

Canned pumpkin isn’t very good anyway. I think what you guys call pumpkin is what I would call winter squash (usa). We almost always use butternut or acorn squash for pumpkin recipes anyway since its easier cut up.

Oh I see! Thanks for educating me. We call many of the larger squash here pumpkin. I made some bread with a 'Kent' pumpkin as well, but this one tastes better I think and yes, much easier to cut!

Hi Antionette, it's a Chinese dough mixer, Bear brand, but you can use a bread machine or other mixer too, or knead it by hand. All the details are in the written recipe, link in description :)

That's excellent. A bread machine has a very similar mixing action to my Bear mixer. It will do a fine job!
