my mentor crazy frank freeman of franks heavy duty cycles in joplin mo, taught me to do wheel bearing exactly like this in the late 80's. only diff is he would turn the spacers on his lathe to get 3 to 5 thous end play. since i didnt have a lathe he also taught me how to do it with shims. i miss that guy.

a buddy of mine had a 03 Dyna told me there was a clunk in his front end it ended up being the chrome inner primary cover hitting because the rear was lowered way to much he swore it was in the front

Why don't you use an axle bearing shim kit for clearance? I was able to get a .002 clearance both front and back.

that design did not get used for another 15 years. different parts and different hubs. this older design works just fine but takes longer to do. tatro

Knocking could be in sloppy forks .or brake caliper . Head set loose. Even handle bars .
